Super cute local restaurant. Service was noteworthy. All the bites were tasty and some even memorable (salad, tortillas, fruit dessert and a special spiced coffee). They have multiple types of corn base to make tortillas, etc. which is unique. Recommended for date night if you want local/cute/eclectic. Go somewhere else if you want formal/fancy.

We had a late reservation and decided to show up early to find a seat at the bar. The host was able to find us a seat at a community table, which was wonderful. Our entire experience from the food, the cozy vibes, to the warm service was all around a 10/10 and authentic. It's a hidden gem in a wonderful neighborhood.
Unfortunately, Pancita disappointed. At the price point they're charging, I expect everything to be fantastic, but though they had some good flavors, it just didn't deliver on its promise.
Suadero tacos were good, no complaints there. Really enjoyed the flavor, it was a good appetizer.
I liked the Pipian sauce with the pork chop, but they were very stingy with the sauce at the almost 50-dollar price point. The pipian should be the focus of that dish, but it felt sprinkled on, more like it was more a supporting player to the pork, which I found unpleasantly fatty. On the pork chop, fat texture hadn't undergone the maillard reaction so the flavor and texture weren't enjoyable. The tortillas were great, I found those to be the best way to enjoy the Pipian, but for some reason there was an overabundance of parsley in the dish, whose very strong flavor completely overpowered the pipian. I cannot understand what the intention of using parsley like that was.
We wanted to get the chicken and mole, but after seeing how little quantity of mole other diners' plates had, we instead reconsidered.
In its place, we got the Chile en Nogada, which was a complete reinvention of the dish using a cauliflower cream and vegetarian filling. I love the traditional version of this dish, but I nonetheless did enjoy their experimental take on it. However, at thirty dollars for the dish it was very undersized with barely enough filling in the poblano. And I don't know what's up with the parsley, but again I had to proactively remove it from my food or it would've overpowered the dish's subtler flavors.
As for drinks, I got the horchata, which I very much enjoyed, it was delicious.
Other than the food, I found the staff very accommodating and friendly. The ambiance was nice and cozy too.
All in all, Pancita had some promise, and I very much hope they continue to improve.

Great food and service. Really fun and unique neighborhood spot.
Food so amazing we made a reservation for the next week right after we left! It’s now the mist show spot for all out of our town guests and loved ones we want to treat with an incredible meal! Our whole table was buzzing over every dish!

Loved the tuna tostadas, dessert tamal, and for the first time in my life I actually liked the mole...recommend if there are only two people to share one entree, as they are large portions, and get an extra side instead!

My new favorite restaurant in Seattle! Everything we had was incredible especially the tuna tostados and pork chop al pastor. The tres leches dessert was alright and I’ll probably skip dessert next time but I’m excited to come back and try more of their dinner menu.

Pls it’s in a nutshell - overhyped, oversalted, undistinguished and overpriced. Under the premise of a special meal - see the many encomiums given by others - the 1 hour and 45 minute wait to be served ended with a limp salad covered with shredded string cheese. And in succession, mini tostadas of tuna covered in an undistinguished red sauce were followed by equally unimpressive beef bits with onion and wilted veggies. Everything tasted the same way, and the background noise blended with bland tasting notes only created an abiding sense that we were being fleeced in real time. One of our party of three walked out, prompting an immediate delivery of rice and beans, a palliative gesture coming too late to matter. Finally our main course of salmon festooned clavicles arrived in a box, thanks to the perceptive waiter who feared our walking out en masse without our final course. What a debacle, not salvageable by comping the salmon. Do not find yourselves victims of overhyped, mediocre food pretending to be haute cuisine. Let be the finale of seem. The only emperor is the emperor of ice cream…

Pancita has been on my list for a while and I am happy I was able to finally eat there. Every dish was boldly seasoned and perfectly balanced. The bean "falafel" with the spicy light sauce were delicious. The cauliflower tostadas were crunchy and the masa used for the tortillas delicious. Nothing like freshly made ones! The fish was perfectly cooked and went really well with the cherries in the sauce. Dessert was to die for: A sweet tamale with berry sauce and Mexican chocolate chunks. Absolutely amazing. Staff were friendly and attentive. My only complaint being the loud music and the subsequent increase in voice volume from the customers. Less is more, when it comes to tunes... Will definitely go back!
