Pho Vietnam deserves to be a contender for one of the best pho cafes in North Seattle. After spending the entirety of my life eating pho around the greater Seattle area; this is the most consistent, no-nonsense, soul-affirming bowl of soup I've found, by a large margin.
The nuoc cham that arrives with their egg rolls is made in house with pepper flake and grated carrot. They do not add corn syrup. It should also be noted, the carrot is an extremely well thought out way to balance the fishy-acidic sauce.
Their chili paste at the table is also house made with what seems to be palm sugar. It is delicious. Use one of the small sauce dishes they provide table side and pair it with their hoisin.

I wanted to like the place based on the reviews but I got food poisoning from here. The large portion is big enough for two servings. I separated them both and got sick within 1 hour each time… my stomach was growling at me. Would not recommend.
