Wataru offers an exceptional dining experience with delicious sushi and attentive service. Guests can enjoy unique sake glasses and a variety of high-quality fish, including adventurous dishes like cod milt and yuzu scallop. The omakase and chirashi sets are highly recommended, whether dining in or taking out. The chef is skilled and welcoming, providing an unforgettable dining experience with perfectly seasoned rice, high-quality aged fish, and creative flavor combinations. The sushi includes highlights such as four nigiri, with a summer-inspired yuzu scallop and a fresh oyster nigiri that feels like a bite of ocean. The apple wood smoked salmon offers a perfect balance of smokiness, and the oysters are very fresh and well done.
While the first half of the omakase impresses, some nigiri in the second half can feel unbalanced or too salty due to overpowering sauce, and the hand roll is not as satisfying. The dessert did not quite wow, but overall, Wataru remains a top sushi spot in the PNW, known for its good service, fresh ingredients, and attention to detail. The takeout service is highly recommended, especially for those unable to get reservations, as it was described as phenomenal and gives a good idea of the quality offered in the full omakase dining experience. For about $200 per person, some expect more creative dishes and better dessert, but the overall experience is still memorable and satisfying.
