I really wanted to like this place because I’ve heard quite a bit about it, but unfortunately my experience at Phở Đồng Tháp was pretty disappointing. First of all, the pho itself didn’t taste authentic to me. The broth, which is usually the heart of a good bowl of pho, was bland and lacked the rich depth of flavor I was expecting. On top of that, it wasn’t even hot enough when served, which made the overall dish feel flat. The meat was super chewy and tough, not tender like a proper pho should have.
Their house-made noodles, which I thought would be a highlight, were also a letdown. They were too thick and not fully cooked through, leaving an unpleasant texture. It honestly felt like the whole bowl was rushed.
I visited on a Sunday morning, and it seemed like the restaurant was short-staffed. I only saw one host, one server, one cook, and one runner trying to handle the entire restaurant. I understand how stressful that can be for the team, but because of it, the service also suffered. The wait times were longer than expected, and it didn’t feel like anyone had enough time to check in or provide attentive service.
Overall, this visit didn’t meet my expectations in terms of both food and service. Pho is something I truly love, so it’s extra disappointing when it doesn’t deliver. I hope they can improve their broth, noodle quality, and staffing situation in the future, because the potential is there — it just really fell short this time.

Noodles are so fresh!!
As being Vietnamese myself, I've learned the culinary aspects of Vietnamese cuisine. The first time I went to Dong Thap, I came out with a good impression of the restaurant. Over the times though, I've slowly recognized that service got worse, food was getting saltier, and the wait being longer for food. I would see this place as an experience, and if you're here for good food, go somewhere else. You want to see a machine make Pho, fine. Just not for the food.

Came for the larger bowl of pho, and it was worth the trip! Freshly made noodles made a big difference! Coming back for sure!

1st timer,
Got pho ga with beef broth to go.
Broth was just ok. That pho spice scent and taste wasn't there. Dark meat,
no no no, should be white meat. I knew their noodles were scratch made. Seemed like al dente linguine.

Best pho place in Seattle in my book. Also the banana dessert was amazing!
First time having Dong Thap Noodles. My husband and I ordered vermicelli noodle bowls. 5 stars for flavor, portion, and speed of service. The owner Kayvee was our waiter and she took the time to chat with us about her family’s story and how she has been running the business for the past 10 years. She prides herself on how her family has overcome adversity to grow the restaurant to what it is today, and most of all how they serve only their in house made rice noodles. We will definitely be back!

First I have to gi e credit to their service, EXCELLENT, I ordered a bowl of house special beef noodle due to the hype I see on the media. Per my opinion, and just my opinion only. The house special beef noodle got nothing to write home about. Just a mediocre bowl of beef noodle. I h

Restaurantji Recommends
Was super disappointed, I wanted to like this place. The atmosphere and service is nice. The Pho left much to be desired. The broth was watery, bland and overly salty. The brisket was not good quality. The portion also felt small given the price.

Flavor was decent. Noodles for hu tieu was too thick for hu tieu. Bun bo was lacking more flavor of lemongrass.

The broth here is really good! I usually don’t have to add all the extra sauces to make adjustments. They used fresh noodles for the Pho that I ordered which was better than the thin rice noodles traditionally used. Differently a go-to spot for me!

The house made noodles make this place extra delicious. Their flavors are also really delicious and just slightly unique enough to be what I expect from pho broth, with a little something extra to make it really tasty.
