It is an underrated and underappreciated vegetable. A dark and vivid root jewel that hides in the soil like a rare secret treasure sought by dwarves and worn by green eyed sorceresses in high windswept castles. It is both dark and bright at the same time, stains the fingers a deep red and is reminiscent, we must admit of blood. We speak of course of the humble Beet.And now that I think of it, the inherent sweet crunch, the willingness to be pickled, generosity of its color, I don’t know why I don’t see it in more Sushi. Which is why I was so excited to see Rolling Beets Sushi appear on my Google maps like an island showing up for a castaway. Seeing it was only open Thursday through Saturday and it being a Monday, I could barely contain myself, but Thursday came and I punched in the address and ventured forth!Ok… I was confused. I ended up at Frontier House. Which is a restaurant that I like, in fact really like (review coming), but no Rolling Beets in sight. I tentatively stick my head inside and say I’m looking for this Rolling Beets place and they say, “Yeah, we share the space!” And just like that, I enter Sushi Nirvana!I get Turn Up The Beet rolls and Spicy Salmon rolls and they are perfect, so perfect I ask to meet the chef, who is one of those people who have never had a bad picture in her life. She is enthusiastic and dedicated and charming and one of those people who you can only wish the best for.You can’t lose. If you want perfect Mac and Cheese, you can go to Frontier House and if you want perfect Sushi you can go to Rolling Beets all at the same time! It’s like being in an alternate universe where all good things are brought like blessings to the same table!

We ordered sushi as an appetizer but it was definitely the star of the meal. We had two rolls the Vegas roll with smoked salmon was delicious and the “beet me to the punch” vegetarian roll was special. I can’t wait to try more.

She used to roll sushi at downtown Tommy Os then started her own business. Loved her there and absolutely love her unique take on Sushi now. I didn't even realize that vegan sushi was possible, mind blowingly good.Vegetarian options: I didn't even know that vegetarian sushi was possible, and she makes it absolutely delicious.

I have had these sushi rolls several times now as an appetizer, as light supper, and a take out contribution to a group meal(They were Each time I was instantly delighted by the presentation of the order and then thrilled by the flavors and textures of the rolls. Some flavors that pop, some that surprise, all yummy.Wonderful each time and worth repeating.Vegetarian options: There are lots of beautiful, tasty vegetarian options.

Fantastic time last night (New Years Eve)! Felt like we went back in time to an intimate authentic tiki bar. Food was amazing! Drinks and drink recommendations were fantastic. Wait staff and bartenders were extremely friendly, knowledgeable and accommodating. Definately will be returning.
