Fujiyama, a Japanese establishment offering hibachi and sushi at 17395 W Bluemound Rd in Brookfield, Wisconsin, received feedback on 15 operational items during a November 4, 2024, inspection by the State of Wisconsin Department of Health Services.
The Waukesha County restaurant, which has a 4.5-star rating out of 5 from 926 Google reviews, received two priority violations, seven priority foundation violations, and six core violations, including one repeat observation. Staff addressed several items during the inspection, while others required follow-up engagement.
Among the priority violations, state records revealed that inspectors observed an employee not washing hands after handling uncooked shrimp before touching clean equipment. This was corrected on-site with staff education. Another priority issue involved unsuitable cold-holding temperatures in the bar cooler.
Priority foundation violations included the lack of a vomiting and diarrheal event clean-up procedure and an absent time management plan for foods held without temperature management.
The inspector's note revealed that Fujiyama in Brookfield, WI, also lacked proper sanitizer test kits and had a non-functional handwashing sink in the kitchen.
The inspection noted positive direct corrections by management, including staff education on hand washing procedures and proper temperature management measures.

Fujiyama is my absolute favorite Japanese restaurant! They have, in my opinion, the best sushi rolls and salmon sashimi, along with attentive service and delicious cocktails.
My favorite sushi roll is the Angry Dragon, which perfectly combines the sweetness of fruit with the crispiness of tempura shrimp, topped with a tasty mango sauce. For appetizers, the Crab Rangoon and Gyoza are my go-tos. The Crab Rangoon has a rich, authentic cream cheese flavor, unlike the artificial taste I’ve experienced at some other places. The sauce served with the gyoza is a hit with both my husband and me; we even use it with our sushi!
I’ve visited several times, and the cocktails recommended by the servers have always been great. My favorite is the Lychee Martini. It features lychee, a popular fruit in China that’s juicy and bouncy, and the drink has a unique tropical fruit flavor.
I haven’t tried much of the hibachi menu, but I did enjoy the Hibachi Chicken during their Monday and Tuesday specials. I love how they season their sauces.
The service here is very thoughtful. They provide warm towels for you to clean your hands, and there’s a surprise song and dessert for birthdays (although I haven’t celebrated mine here yet, the dessert looks amazing!). On my last visit, I accidentally left my phone behind, and a server even ran out into the rain to return it to me, which is why I’m able to write this review from my phone.
Fujiyama is a restaurant with a long history, and they continue to excel in everything they do.

I had an incredible dining experience at Fujiyama in Brookfield!From the moment I walked in, the ambiance felt warm and inviting, with a modern, minimalist decor that instantly put me in a relaxed mood. The staff were friendly, welcoming, and clearly passionate about the food they were serving.
The sushi was nothing short of phenomenal. The fish was fresh, delicate, and flavorful, and you could tell it was of the highest quality. I especially loved the nigiri selection, where each piece was carefully crafted and perfectly balanced with just the right amount of rice. The chef’s creativity truly shines through, with unique rolls that combine traditional flavors with a touch of modern flair.
One highlight of the night was their signature dish, double Lobster ,which had a surprising twist that made it stand out. Each plate was presented so beautifully, it felt almost too pretty to eat!
Overall, Fujiyama exceeded my expectations in every way. Whether you’re a sushi connoisseur or just trying sushi for the first time, this place is a must-visit. I can’t wait to return and explore more of their menu!

Fujiyama has quickly become my go-to spot for Japanese cuisine! The food is consistently fresh, beautifully presented, and full of flavor. I’m always impressed with how they balance flavors in each dish, from the sushi rolls to the sashimi.
One of my top picks here is the Spicy Tuna Roll – it has just the right amount of spice and is always so satisfying. For appetizers, I highly recommend the Shrimp Tempura and Edamame. The tempura is light and crisp, never greasy, and the edamame is always perfectly seasoned. They have an impressive variety of rolls, and every one I’ve tried so far has been top-notch.
The cocktails here are also fantastic! I recently had the Cucumber Sake Martini, which was refreshing and paired wonderfully with the food. It’s clear the bartenders know how to create drinks that complement the Japanese flavors on the menu.
Service-wise, Fujiyama stands out. The staff is attentive and welcoming without being overbearing. They really make you feel at home and are more than happy to give recommendations or answer questions. On one occasion, they noticed I was dining alone and even offered a small complimentary dessert to make my meal extra special.
I’ve been here several times now, and each visit has been as enjoyable as the last. Fujiyama is a place I’d gladly bring friends and family to – they really make every detail count, from the food to the ambiance and the service. Highly recommended!

Disappointed meal tonight. The sever did not give hand towels as we have always gotten. The food was less than the standards that we come to expect. At the end of the meal no fruit as the departing treat. This location is not what it use to be.

We were excited to try this place out. They welcomed us in, sat us and our server was so nice. The dining area looked legit. Thats about as long as the thrill lasted. Lol
We orderded and expected so much better!
It looked good but there was hardly any flavor to anything. And the veggies under the chicken were basically a bag of frozen veggies they microwaved.
For the prices we paid. It was not worth it at all...I did give 2 ☆s, one for the sushi I forgot to take pics of. Those rolls were the meals saving grace and the other for the server.
We felt so let down. We did eat the food, only because we didnt eat all day, anticipating that we'd tear it up here.
We came, we tried....wont happen again.
