We are SO sad about the menu change. We loved the old concept. We went again and again, but have no reason to visit now. Western WI doesn't need another pizza restaurant. There are dozens within a 5 mi radius. The tapas place was unique and original. It also easily allowed for dietary restrictions. AND, it was always full. I can't imagine they were lacking business. Switching to pizza feels like a play to the lowest common denominator, rather than attempting to elevate the culinary options this side of the river like Pedro's did in the past.

The pizza was fantastic and the people working there were genuinely helpful, kind and just great to talk with. I spoke with my waitress, Hannah (who was lovely by the way) and she suggested I reach out to the owner for my rehearsal dinner needs. She even provided me with the contact information. Some people would just say email the owner, she did not.
I reached out to the owner Laura, and she was lovely. I asked her if I could preorder 11 pizzas, pay for them and have them delivered. She wrote back a kind email offering everything I asked for and included heat lamps and warming bags.
In the course of our conversations, she supplied me with an invoice and will work with the brewery to set things up prior to our arrival.
Do not hesitate to eat here. Support people who go out of their way to make a customer's experience a great one. The pizza is fantastic and the people are genuine.
I truly feel blessed to have come upon their restaurant and am so totally blown away by the service and food I received.

I'm usually not a fan of meatless pizza because vegetables make the crust soggy. This crust was to DIE for. Had the picante and there was no soggyness to be found! One of the best pizzas I've had in a long time. Spouse had the three meat which was also excellent and heated up very nicely the next day.

Easily my favorite pizza in town. I've been a long-time frequenter of San Pedros, Barkers, and Del Este for years now, but they really stepped it up a notch with this pizza.
It is the best New York style I've had in the Midwest, and I'm a big pizza guy.
Also, don't skip on the sticky wings they are absolutely fantastic.
I recommend stopping by!

We were a party of 4 on a Thursday evening in October at 5:30. We made a reservation...not sure if that was necessary, but nice to know they take reservations. There were plenty of other customers there while we were. We had cocktails, wine, cheesy garlic bread and pizza. Our server did a great job. Our drinks were great. The garlic bread was good. We loved the crispy thin crust on our pizza. The sauce and toppings were also great.

This place is picante! We modified the picante pizza a little bit with more meat, but it is so delicious! Zombie drinks and pizza galore—We have went here since it was Pedro’s del este and it is still soooo good!!!
We asked the server what they were best known for and we ordered it - the 4 meat pizza and meatballs w the BEST Italian garlic cheese bread. All of the food was 11/10 DELICIOUS and so fresh and perfect. We were in heaven!!

Very excited to try it. Pedro's and Este have been go to places. Bartender was very good. Waiter very service oriented. Salad was excellent. Lived in NY for 35 years and have eaten at all of the best pizza restaurants. This was not NY pizza. Disappointing. Crust was way over worked and was tough and didn't rise. Oven should be hotter. I hope that these details get refined as we love this place.

We’ve been here a few times now. We LOVED when it was tapas, before the menu went downhill. We’ve been happy with the pizza, however, the service in-house and to go has been terrible. When in-house my pizza by the slice order was forgotten. Twice. When ordering to go tonight, one pizza (1 out of 4) needed to be remade for whatever reason (they didn’t tell us, my guess is they forgot) and they did not offer any discount or refund for the screw up and wait.

We are always on the search for amazing pizza, and Pedro's did not disappoint. Simple ingredients with complex flavor profiles and perfect crust make this a winner. Great location for a date night in downtown Hudson with lots to do before and after dinner. We are anxious to go back and explore the other menu items.
