Proof on Washington

Proof on Washington is a charming, beautifully renovated old house with a lively bar on one side and a warm dining space on the other. The atmosphere was one of the best parts of the experience. The music was great, people were singing, and the whole place felt fun, relaxed, and like somewhere you genuinely want to spend time. The hostess was wonderful, and our server, Trinity, was extremely friendly, helpful, and welcoming. She genuinely seemed to enjoy what she was doing, and that made the experience even better.

We started with drinks at the table, and both were excellent. The Washington’s Rebellion Cherry Bounce was memorable and very well done, and the house smoked old fashioned was also delicious. We then had the Roasted Brussels, and they were absolutely amazing. The combination of honey, balsamic glaze, candied pecans, and parmesan was outstanding.

For the main course, I had the Powderhorn Chop, and the flavor was very good. My only critique is that it would have benefited from a stronger sear and a bit more crust on the outside. A little more Maillard reaction, that browning of proteins and sugars that creates deeper savory complexity, would have elevated it even further. We also had a salmon special that evening, and that was outstanding. Dessert was another highlight, especially the warm pecan bourbon pie with ice cream, which was absolutely delicious.

Service was a major strength. In addition to Trinity being so warm and attentive, other staff members, including management, came by to make sure everything was going well. We also appreciated that they offer a military discount.

This was our first time here, and so far it is the best restaurant we have tried in the Berkeley Springs area. We were told they are expanding, and we are already looking forward to coming back, especially if outdoor seating is added in the future. This feels like exactly the kind of place we will return to often, especially when friends come to visit.

Incredible restaurant and dining experience. My girlfriend and I had dinner here after spending a relaxing day in Berkeley Springs.

Mary and Trinity were wonderfully accommodating, friendly, and made us instantly feel right at home. We loved talking with them throughout our dinner, and they both provided excellent food and drink recommendations.

My girlfriend had a delicious sangria (and myself a cold Diet Coke). As far as food, my girlfriend had the Chipotle Pesto Pasta, and I had the BBQ Chicken/Shrimp special. Both dishes were generous portions with delicious flavor. I was particularly impressed with the house BBQ sauce, which reminded me of Kansas City BBQ. The pasta was cooked perfectly and was rich without being overly creamy or heavy.

We ended our dinner by choosing a delectable milk and cookies cake from the desert tray, though all the deserts looked fantastic. I knew we couldn't go wrong on desert, and Trinity's descriptions of the deserts made our choice very difficult indeed. We were happy with the rich cake that did, in fact, taste just like milk and cookies.

But back to the service - the outstanding service at this restaurant is what really made our night memorable. Every member of the staff we spoke with was friendly and warm. I was smiling all night from our interactions. Although we live a two hours drive away, we took Mary's suggestion of a future, spur of the moment date night at Proof on Washington to heart. We will be back!

This place was hitting on all the right notes! Delicious fresh quality food, great friendly service and clean cozy atmosphere! I got the chicken shrimp Chipotle pesto pasta with Cajun style grilled chicken breast, and shrimp (Good size) also had fresh bell peppers and onions it was fantastic! The Stracciatella salad was delicious and exceptional, with fresh mozzarella with pesto sauce and topped with roasted tomatoes!

We were delighted to find Proof as we were driving through Berkeley Springs. The service was friendly and the burger and salmon that we ordered were delicious. The handmade fries were great! I’m glad we decided to stay for dessert!

The food and drinks were amazing. We got the pretzel with beer cheese appetizer and it was phenomenal. For main courses we got chicken and waffles along with the smoked salmon bagel. The waffle they use is similar to a funnel cake and is absolutely delightful. The cocktails are also great as well.Cameron was our waitress and she provided spectacular customer service.

Fantastic meal at Proof on Washington. We had the steak special and the salmon, and both were delicious. Our server was also top-notch. And I really enjoyed trying George Washington’s favorite cocktail.

The powder keg fries might be the best appetizer we've ever had! The service, food, and ambience were amazing. If this place was closer to us in Lynchburg, VA, we'd be here every week!!!!

The food was great. My family and I were visiting, this was our first restaurant in the area, we enjoyed our meal very much. Perhaps we came during downtime, not that busy— but that was perfect for us. Mia our server was great!

Celebrated my besties birthday here and we thoroughly enjoyed our experience. From the drinks to the meal and the service our waitress Trinity provided it was all 10/10. We will definitely be back. I wish I would’ve captured a picture of our meals but it was too delicious and disappeared quickly. 😂

We tried Proof for the first time tonight, and we were incredibly impressed. Our waitress, Trinity, was personable, friendly, attentive, and an absolute delight. The food was amazing and reasonably priced. Everything tasted phenomenal. The atmosphere was comfortable, inviting, and warm. All other staff was extremely friendly and welcoming. We will absolutely return and recommend Proof to others. What a great experience that left us smiling and talking about it the whole way home. Thank you.

We had such a lovely experience last night for my birthday dinner. We had mac n cheese and brussel sprout which were sooo good. But the highlight was the hospitality from Trinity our server and everyone in there that made it feel so homey and like dining at family house. Trinity had such inviting and fun energy and we loved how she brought out the desserts on a tray that was super innovative. Highly recommend to spend sometime here

Absolutely 100% positive experience. Service - even though they were short staffed - was perfect and attentive. Trinity is THE best. She was so determined to make sure the smoked old fashion was really smoking 😁. We stopped in for appetizers and drinks as we had dinner plans elsewhere. Next visit this will be our main meal. The wings were great. And the pretzel is huge [not bites]! Can’t wait to visit again.
