Excellent in every way. From the moment we were greeted to the very end, it was all lovely. We had the rib eye with a lobster enhancement, asparagus, mashed potatoes & the milk bread. Everything was prepared perfectly. Highly recommend.

We had high expectations for this restaurant as we searched for the “fanciest” restaurant in Banff and this one frequently came up. When we arrived it was very basic looking, the vermillion room seems more grand and fancy looking. We saw there was a dress code before we came and that was nice as we like to dress up but when we got there most people were wearing dirty sneakers and casually dressed. All this would be fine if the menu wasn't priced as a high as a nice restaurant should be. Still we remained hopeful the food would be the thing bringing all the good reviews but we were so disappointed, both of our dishes came to us like warm and my fish had so much water in the plate as if it had been sitting for about 20 minutes or more. Even the sauce on the plate was hardening as if it was not fresh, we didn't want to make a scene or anything as we were already a spectacle for being so over dressed and we were very hungry so we just ate what we could and left. We tried to call back later to let the manager know of our complaints and we could not get through to him otherwise we wouldn't have left this review. But it was so bad it would actually bother me to not leave this review and warn other people.

1888 is a definite treat! We were taken care of by Morgan for our 10th anniversary celebration and his service and recommendations were exceptional. We splurged on the Alberta wagyu and it was the stuff dreams are made of. Cooked perfectly! The bison and asparagus were also wonderful, well-paired with wines from the extensive wine list. Save your pennies and tuck into a cozy table at 1888 to celebrate your next special occasion - you won't be disappointed!

Understaffed and slow. Also, I am a guest in the hotel and there was a mixup with the payment. The waiter chased me down in the hotel. Then they blamed the front desk saying I did not have a card on file. I talked to the front desk and they blamed the restaurant.

I did not have a good experience here. The service was very slow towards the end of evening when the restaurant was not very crowded. I also had a mix up with the bill. The restaurant is located in the Fairmont Banff Springs and I was guest at the hotel. I billed the tab to my room like I had done at other restaurants at the hotel and went to another establishment at the hotel. The waiter from the 1888 Chophouse hunted me down and demanded that I pay the tab by credit card at the bar because I did not have a credit card on file at the hotel. I went down to the front desk, and they said I did have a card on file and that it was the restaurant's issue. I still have not gotten an explanation for why that happened.
Absolutely amazing meal and service! Morgan was top notch and one of the best servers we've ever had the chance to interact with. All the staff were full of smiles and immediately ready to have us in their company. Definitely worth the price.

I can’t give more than five star but Morgan was the most amazing server to have taken care of us while dining. He was extremely attentive when needed without making us feel overwhelmed or over-attended to. He was spot on with recommendations, and he offered great conversation throughout the meal.

Everything was amazing. Our server was extremely helpful in picking wines and answering questions about Tuscan varietals. He even offered to let us try one particular wine to compare to what we were drinking. Food was great and cooked to perfection and everything was perfect with the order. I am very pleased.

⭐️⭐️ Disappointing Wedding Night Dinner We came to 1888 Chophouse for our wedding night dinner, expecting something special—but unfortunately, it fell far short. Despite mentioning the occasion when booking, there was no acknowledgement other than the afterthought of a small soft serve ice cream? We found this odd for a wedding celebration.
The atmosphere was nice enough, but the portions were shockingly small for the price. For a high-end steakhouse, we expected to be impressed, but instead we left feeling underwhelmed and still hungry. For what was supposed to be a celebratory evening, it ended up feeling like any other overpriced dinner. Very disappointing for the standards at Fairmont Banff Springs.
