“I must give a shout-out to Zoran who was our server for lunch at the Vermillion Room on May 31. We were a Mother-Daughter-Grandmother group, thrilled to be in Banff and grateful to be together. Zoran's service was impeccable. He knew what we needed before we did. He was kind, attentive, and sincere. He knew the menu inside-out and we enjoyed the Beef Dip sandwich and the Croque Monsieur. The Paris-Brest was a lovely surprise to fête Grandma's recent 85th birthday! He also shared the wealth of his knowledge of the area and suggested some sites to see that would truly elevate our experience in Banff. Zoran represents Fairmont to the highest of standards. “I recently had the immense pleasure of experiencing the 7 course tasting meal with wine pairings at Eden. It was truly a transcendent experience. This is going to sound hyperbolic, but there is no easy way to describe how thoughtful, elegant, and surprising are all of the ways this team was able to deliver such an amazing sensory experience. Incredible presentation, texture, balance, subtlety. Sublime! Transcendent? Ok, I know, it sounds over the top, but it has to be said. The Sommelier, (I think his name is Robert but I had 7 tastings of wine) is an absolute marvel of knowledge, playfulness and astute storytelling while leading you on a truly singular and expansive tasting experience. And, all of this in an unfussy, warm and fun atmosphere. If you have a chance, go here and experience this! It will be a memory you will want to revisit often. Truly a rare gem.“
