I must give a shout-out to Zoran who was our server for lunch at the Vermillion Room on May 31. We were a Mother-Daughter-Grandmother group, thrilled to be in Banff and grateful to be together. Zoran's service was impeccable. He knew what we needed before we did. He was kind, attentive, and sincere. He knew the menu inside-out and we enjoyed the Beef Dip sandwich and the Croque Monsieur. The Paris-Brest was a lovely surprise to fête Grandma's recent 85th birthday! He also shared the wealth of his knowledge of the area and suggested some sites to see that would truly elevate our experience in Banff. Zoran represents Fairmont to the highest of standards. Thank you!

We came for the Sunday brunch at The Vermillion Room and the setting is absolutely beautiful—classic, elegant, and perfect for a special occasion. The food was fresh, well-prepared, and offered a nice variety, from pastries to seafood to carving stations. That said, for the price point, it would’ve been great to see something like endless mimosas or a complimentary drink option included. Still, a lovely experience overall with great service and a stunning view. Worth checking out if you’re looking to treat yourself in Banff.

We stayed at the Fairmont for our honeymoon and came here for the breakfast Buffett. The food was what you would expect. I appreciated their wide variety and fresh made eggs. However we had very poor service. We both ran out of water numerous times (other tables had carafes of water) and we had to wait a long period of time for our bill at the end.

I had a wonderful experience at The Vermillion. The food was excellent, and the beef dip was among the best I’ve ever had. While the service was decent, it didn’t quite meet the expectations for a hotel of this class.

My friends and I stayed for one night at the Banff Springs, and we truly appreciated the excellent service we received. The front desk staff were incredibly kind and welcoming.

We also want to give a big shoutout to Breagh from the Vermillion, who served us during breakfast. She was so sweet, attentive, and made sure we had everything we needed. She checked in often to see if our food was good and if there was anything else we wanted. Her warm hospitality really stood out.

The wait during entry prior to going to table was our only critique. Zoran our server (Vermillion) was outstanding. He was very knowledge about any of our requests and discussions about booking a future event. Very efficient and accommodating - a true professional

The simple green salad, being actually not so simple, was amazing - almost the best salad I have ever had, and I have a greenhouse and grow my own tomatoes and cucumbers. I wish I had taken a photo of it.

We were disappointed with the wait staff’s knowledge about meal serving. She told us the Seafood tower is served for two people and is not for one person. We went by her recommendation and ordered it for two of us. It was disappointed that the Seafood tower was not impressive as the portion was not even enough for one person. The fresh oysters were very small as the tea spoon side.
Our friends ordered Alberta beef steak, the meat served uncooked when she requested medium rare.
We would not recommend Vermillion restaurant.

We just want to say thank you to Kendra, our waitress while we enjoyed lunch, who made our dining experience at the Vermilion restaurant at the Banff Springs hotel special. First of all she remembered us from the last time we dined there which made us feel good. It was her attention to our wants from the menu to our needs concerning allergies that made our visit what we appreciate.Her suggestions were helpful in deciding what we should try.
