We didn’t have a reservation, but they were still able to seat us on a Friday night. We were absolutely blown away by the quality and taste of the food—the milk bread, the scallops, the Alberta Brant Lake Wagyu Beef, the carrots and broccolini, and the sundae! Would definitely return to try more items on the menu!
What an amazing dining experience. We had all of the sides on the menu and steak for our meals. Everything was cooked to perfection. Our server Adam was probably the best server ive ever had. Very knowledgeable about the wine choices and menu and was very mindful and hard working. Definitely amazing at his job. Adam helped make this dining experience incredible. We ordered some fancy wine and had the best time. Would love to come back some day.
My husband and I dined at 1888 Chop House on 12th May 2026 while on a 3 night stay at the Fairmont Banff Springs Hotel. We had the most amazing dining experience there from the moment we arrived to when we left. We were even greeted by our first names which was a lovely touch. Our waiter for the evening was Morgan. He was so friendly/sociable and informative about the menu and helping us what to choose to eat and drink.
