Absolutely amazing experience. Food was top notch. Impeccable presentation and quality. Unique ingredients that were very cohesive. We added on both supplements. The quail rillette was 10/10 but the lobster add on wasn’t our favourite (the bisque around it was delicious though). We did the non-wine pairing which was advertised as a ‘juice pairing’ but it was so much more than that- would highly recommend!Everything is homemade and high quality. Staff were amazing. The ambiance was forestry and rustic. Really fun decor and lots of fungi!Will certainly be back to taste the next menu.

Wow! Thrilled to eat here! Can't wait to come back. Food was delicious! Amazing integration of foraged and locally sourced ingredients. Service was warm and attentive. We chose to share both menus in this 7 course tasting. Favourites: the scallops and the lobster pasta -yum. A great choice for special occasions and foodies!

Was my engagement dinner and was absolutely one of the worst experiences due to the absurd price of 110$ per person to start and very poor quality food. Do not make a reservation here because automatically you are signing a 60$ per person on booking. When we showed up we saw the menu and all 6 of us realized nothing was something we were interested in eating. We mentioned we were gonna go somewhere else and they said we were obligated to pay 60$ per person no matter what. At this point we were forced to order and received a single scallop sliced so thin it was able to make 6 plates of food served cold in a weird cold sauce with hard peas sprinkled on top. The second course was deer meat that was basically served rare and no one could even chew it. And lastly served a desert that was literally presented on a birds nest. It was awful and sour and once again probably one of the worst dishes I ever ate. Not only was this restaurant extremely overpriced it had awful tasting food. The worst part was it was obviously not busy and when we said we were not interested in eating here they were still going to charge us regardless because I had made a reservation. Guess I learnt my lesson never to give your credit card to book a table. We enjoyed going to Tim Hortons after and laughed about the situation, all the fake 5 star reviews and how un accommodating this place was.

We came here as a group of 8 and all of us had a delightful time. The restaurant staff was more than awesome and even stepped outside to take a group photo post dinner.We did the wine pairing with the 7 courses - both hunter and one gatherer. Food was impeccable. Definitely recommend for a special dinner!!Vegetarian options: They have a vegan menu

We went to the wine and Italian food dinner and were mind-blown. The chef detailed every dish and where all the ingredients were from. The wine was great and perfectly paired. We met a lot of locals and some travelers and this will be remembered as one of our best nights in Canmore.

Absolutely impeccable evening. The new early spring menus - both the Hunter and the Gatherer - were flawless. We discovered new ingredients and had fun trying almost all the cocktails offered. Lovely touch to use exclusively Canadian wines for the wine pairing.A special mention to the breads (brioche and sourdough) and butter which we are still reminiscing about.And another special mention to Pierre, who was outstanding. Not only was he funny and kind, he oozed of passion for the food and wines served during the evening, and was very knowledgeable about each ingredient.We definitely recommend Sauvage, and we will be back for another food adventure.

Set menu priced at $110 per person based on a five course meal. No options other than set menu. Service was great but the food was sub par. I dine out a lot and this was not good value. This restaurant once was amazing under the name tapas and served delicious dishes. They have strayed far from what was once such a special place.I will never return.

I was lucky enough to visit Sauvage for the first night of their new early spring menu. My sister and I did the 5 course menu, I did the juice pairing and she did the wine pairing. The mushrooms were the star of the show in the dishes, and the service was elite. Thanks chef Tracy and team!

Really amazing restaurant. The bone marrow ice cream was a pure marvel. The service is super friendly and the whole atmosphere is very pleasant. A lovely evening! Highly recommend this place!

The ambience, the food, the service - all incredible. The attention to detail that goes into each dish and the chefs skill in flavor combinations is very apparent and heightened by the juice pairing in particular. We had a great time!

We've wanted to try this place for a while and were not disappointed!! It's a really cozy, unique restaurant. We had the hunter with the juice pairing and gatherer with the wine pairing. It's worth spending the bit extra to do the pairings!!! It gave us the chance to mix and share everything. ALL of it was delicious, absolutely fantastic! Our server was excellent and explained each dish to perfection. By the end we were stuffed and so satisfied. Highly recommend trying this place! You'll be amazed at what they create from things you would put in a vase and don't expect to eat...and none of it was on my ‘no go' list!
