Sauvage has a great tasting menu. You can do 3, 5 or supplement to 7 courses. Have a good wine list and also offer to do wine pairings. The food and service was excellent, We had a really great evening dining at Sauvage.

We had an amazing time at Sauvage and highly recommend it to others. I had the juice pairing which ended up being so much more than I expected in the best possible way - truly enhanced the flavors of each dish - 1. Rabbit pairing was lilac and spruce spritz 2. Scallop pairing is a peach and juniper juice 3. Boar pairing is smoked chaga kombucha 4. Venison pairing is Saskatoon, Lovage and Grains of Paradise 5. Dessert is Seabuckthorn and Carraway Some items we had never even heard of - so it was a delightful process of discovery. The service was warm and attentive, with great communication from management before and after we came in. I can only imagine the time and energy it must take to create the ever changing menu. It will give you a true sense of place to eat here. This place is a Canadian treasure and I truly hope it lasts for many years to come.

One of the most unique and well-executed dining experiences that I've had. We all ordered the Gatherer (vegan) menu and were blown away by the inventive use of seasonal vegetables and herbs, beautiful plating, and attentive service. Definitely my favorite restaurant in Canada.

This restaurant needs to be at the top of your list when visiting Canmore! The waitstaff was amazing, food out of this world, and the juice pairings delicious!!!

We visited Savage as part of our Canadian Rockies holiday. Everything about the evening was magical! The food highlighted clever cooking with good quality local produce, throwing in a handful of ingredients we'd never heard of before. We paired the food with the Canadian wines, and we were excited to try these as they can't easily be sourced in the UK. The service was excellent, and Rebekah was an excellent host.

We had a nice time at Sauvage. The food was good, but not great. The service was really good, everyone was very attentive and knowledgable. We know it is a tasting menu but the portions are extremely small for the price. We all agreed it was good but likely wouldn't go back.

Some of the dishes (rabbit, venison) were harmonious in their flavor profiles while others were not such as the scallop, which was overwhelmed by fennel and overly spicy “kimchi” (which was more like a sauce than a kimchi), and the predessert. The other dishes were rather forgettable. Consequently I don't think the value is there.

Bringing chill vibes, visual experiences and tastes of never experienced before! The wilderness culinary experience was beautifully presented to our table, with perfectly paired wine and house made juice. I'm excited to return in the next season, with new flavours to grace my palette!

I get the concept of foraged food and conservatism but this was terrible terrible terrible.. if you are opting to dine here because of the vegan tasting menu I urge you not too. The flavors were bland, we felt like they served us what tasted like grass, flavors did not go together, nothing tasted good at all, the tarts was inedible like rock hard you couldn't even chew it and some with the dense “sourdough” bread it was so chewy and you couldn't even cut through it with a knife. Each dish has some inedible like wtf is this aspect to it - like I thought I was on a prank show. The amuse bouche was the best part - definitely not worth the money at all - had I known it would have been like that you couldn't pay me to eat there. I just don't understand the good reviews. There were 6 in our party and we all did not enjoy it

A unique experience. A delightful building, excellent service in general. This kitchen has an exceptional ability to put flavours together. I enjoyed everything. I recommend a visit. Only downsides: We were put by the music speaker which was extremely loud. We asked to move to the table for 2 nearest, which we were told was “booked”. Odd as it wasn't used at all and you cannot book specific tables. There was an immediate offer to reduce volume which, if that happened, left it very loud. Powerfully expensive and small portions. To be fair though, if you are this good you can charge this much. Also the meal was certainly enough for my wife and I, but US people would struggle.

It was overall a good experience. We very much enjoyed a few of the dishes. We appreciate that they were quite accommodating to our dietary restrictions. If you are in Canmore, worth considering!
