I recently visited Phở Hoan Pasteur in Millwoods for the first time, and overall, it was a positive experience. The restaurant was fully packed, which immediately gave off the impression that it’s a popular local spot — always a good sign.

I ordered a chicken rice and poached egg dish, which came with rice, vegetables, and some salad. The meal itself was simple but satisfying — not overly spicy or rich in strong flavors, which I actually appreciated....

I've been to this location many times over the years, although unfortunately during this visit my goto 5 Star Vermicelli bowl (bún) was, not as good as it used to be. There is more lettuce and sprouts and less carrots and cucumbers.
There was also a noticeable reduction in protein, and much of what was received was overcooked and chewy.
The flavour is good, although for $18, I have to rethink if I will return anytime soon.
