As close to what my Aunt Dora cooked as far as excellent cooking and authenticity available for Alabama. The Chili 🌶️ Colorado was more authentic when they first opened but they had to tame the flavors down to appeal to Alabama taste buds.
Had a special burrito made without any problems food was excellent

Great fajita chicken salad and Pollo Verde. You can always bet on a good Mexican restaurant when the salsa is outstanding. El Herradura is a great go to when we are planning a trip to Huntsville.
Vegetarian options: I didn't look to deeply but the spinach enchilada looked tasty from the description
