Seoul Cupbap is a highly recommended spot, discovered at the River City Market. The bibimbap with tofu is outstanding, with each bite better than the next. The staff is incredibly sweet and understanding of spice tolerance, offering a sliding scale of spiciness. The kimchi fried rice is amazing, and is the greatest meal ever had, with the salmon option being extremely flavorful and perfectly cooked. The japchae and mini kimbap are also amazing, and the food is extremely authentic. They have cool drinks, vegetarian options, and an assortment of Korean drinks rarely seen outside of Korea. The staff is friendly and helpful, with fast service. This is the only place to order a bibimbap, and it is a truly amazing restaurant to continue coming back to.
