I took Nikki's Sourdough School for Beginners class. She is such an informative and fun instructor. I learned so much and have been obsessed with making sourdough ever since! We each left with a sourdough starter (and a dehydrated starter just in case!), a loaf of sourdough that we finished off in class and some dough to finish at home. I loved that she did it this way because I was able to enjoy a finished loaf and finish off/bake the dough while my starter was acclimating to it's new surroulndings.

Such a delightful and informative Sourdough baking class with Nicole. I came to class with no background in bread baking, and wanted to learn sourdough with an experienced baker. Nicole is a thorough, patient and an encouraging teacher. The sourdough bread is delicious and I love integrating baking bread into the rhythm of my home . I cannot say enough positive words about my experience for the Laminating Sourdough class with Nicole! First, her micro bakery (home) is incredibly inviting and cozy - I felt right at home when I walked in! Her space is neat and clean and so beautiful! She welcomed me with a smile and made all the students feel right at home. The information she provided on sourdough was fascinating and everything I had hoped to learn. She was great at answering questions and teaching us about the science, history and fun of sourdough! I walked away with so much information, but also two tasty loaves of bread! I love the way she approaches baking bread and truly appreciate her hosting these wonderful classes!

My sister and I took Nichole’s sourdough class and it was AMAZING! Nichole is a great teacher and so welcoming to all skill levels. You can tell she’s put a lot of thought and effort into the structure of the class to make it the best it can be. We had such a great time. Highly recommend - and her sourdough is delicious!

I had an incredible time with Nicole learning how to make sourdough. We opted to do a private lesson—2 of us—and I would encourage you to consider that, because the information can get a bit technical and with just 2 of us, we had the ability to ask as many questions as we needed to clearly understand the starter/dough process. Nicole is patient, smart, and a wonderful teacher. She really wants you to succeed, and is kind enough to answer the inevitable followup questions that come when you venture forth on your own. I plan to take more classes when I have a few more loaves under my belt. So far, so good! Take this class—you (and your family) will be glad that you did.
