Exceptional treats and bread. And no long line to wait in. Great experience. We'll be coming back. Proof Bread needs to open a bakery in East Mesa. Maybe Power and the 202 or Eastmark area.
Got a sourdough bread and a pastry. Both I would label as rather worse than what one would find at a standard grocery store bakery. Sourdough loaf was thick enough to wrestle an alligator. Taste was fine but basic.
The pastry was a jarring combination of mildly sweet and deleteriously sour.
Service was friendly.

great bread, treats and pizza…i don’t get the prices on some things though… $28 for a 4 pack of their treats is wild. you’d think you’d get a price difference from buying 4 as opposed to 1. it is what it is though.
