We went for single order nigiri which is the more expensive way to have a sushi meal. Disappointed at the quality of the uni (sea urchin) - it didn’t feel it was fresh. A bit too much to pay for such quality. The Wagyu one was ok. These items may not get ordered a lot and we regretted not to go for the more popular items.

Been here a few times and really enjoyed the sushi/chirashi don. They have real wasabi. They also have specials if you come at lunch time. Dinner menu is on the pricier side but reasonable for what it is.

Hitoe is making a comeback and better than ever. During covid, the take-out service was top notch. When lockdowns eased up and limited dine-in was allowed, I felt the quality of their sashimi suffered a bit and probably due to supply chain disruptions the fish didn't taste fresh. Still good but not as tender and precision cut as before for maximum melt in your mouth raw fish experience. Now in October of 2023, went back and their menu prices have definitely increases as with any other restaurant. But I feel with the higher prices, Hitoe is able to ramp up the quality of fish whether sashimi, fresh with lingering essence of pacific, or seared hamachi kamma, juicy and fall off the cheek bone with velvety texture. The only criticism is that the rice used for nigiri and maki was a bit stale. We noticed they have younger kitchen staff now so while there's new energy and techniques, maybe the rice maker had called in sick that day. Back in the day this place was always lined up and while now slower, it's better you don't have to wait for a table. You won't be disappointed.
