I really like this place—Chef Shin and his assistant are so steady and focused, no unnecessary moves or chatter, which I truly admire. After a long, busy day I was starving and exhausted, so much so that I completely forgot to take photos… the food disappeared too quickly! 😅 But that’s okay—I’ll just have to go back again. I will be back! 😄

We ordered a dynamite and deep fried california roll and they were very generous with the portions! The sushi was also still warm and delicious by the time it arrived at my house.

So fun to try omakase! Was an intimate setting at the bar with chef making the sushi in front of you and telling you what each dish is. You have to make a reservation for omakase!

4th time coming here. The quality of all the food served is very competitive with high-end restaurants in Japan! It has become a staple for our milestone celebrations. I recommend the Wagyu add-on.

An Unforgettable Sushi Experience in Vancouver
Dining here was truly spectacular. Each dish was a work of art—beautifully presented and bursting with flavor. The service was outstanding, with staff who were attentive, friendly, and made us feel genuinely welcome.
This is easily one of the best sushi restaurants in Vancouver. If you're celebrating a special occasion like an anniversary, I highly recommend this place. The atmosphere is elegant yet comfortable, making it perfect for creating lasting memories.
From the moment you step into Sushi Bar Shu, you realize you’re not just here for dinner—you’re about to experience something intimate, artistic, and unforgettable. But it’s Chef Kevin who turns this evening into something truly extraordinary.
Every single detail is intentional—from the precise knife work to the pacing of each course. Chef Kevin isn’t just preparing sushi; he’s crafting a journey. His deep knowledge of traditional Edomae techniques, paired with modern finesse, transforms every bite into a story. You can taste the season, the ocean, and the philosophy behind the fish—all in one effortless moment.
But what truly sets Chef Kevin apart is his presence. He’s warm, humble, and attentive in a way that makes you feel as if the entire experience was designed just for you. He explains each piece with clarity and passion, never overbearing, but always adding to your appreciation.
The ingredients are pristine, hand picked and flown in fresh, but it’s Chef Kevin’s mastery that brings them to life. His uni and toro melt with reverence. His aged fish reveals layers of umami that linger long after the course is over. And just when you think you’ve had your favorite bite, the next one somehow tops it.
This isn’t just a meal—it’s a memory. The kind that changes your expectations of sushi forever.
Sushi Bar Shu is a rare gem. And Chef Kevin? A quiet revolutionary in the world of sushi. We walked out grateful, full, and inspired—already thinking about when I can return. Thank you truly to the culinary apprentices and staff at Sushi Bar Shu, you’ve redefined the levels of Omakase.
If you’re fortunate enough to grab a seat, savor every moment. This is what passion tastes like!
I was super excited to try this place. It was amazing!!! Kevin was very professional and had explained every dish of what it was and how to eat it. He was also very observant that I didn't eat green onions (quite embarrassing for me 🤣), and he had asked if it was okay. 💓
We had tried the sakura omakase, which was more of a tasting menu. There was 8 settings at the sushi bar, half chose the sakura omakase and the other half chose the regular omakase. Everything was VERY fresh. Kevin exhibited his expertise with pride.
I would definitely go back and try their regular omakase menu for sure.
JMT!
Kevin was so amazing! Such a nice guy and very skilled in his craft. We really want to learn how he makes his tamago. Would def recommend and was the best omakase experience I’ve had in van.
Restaurantji Recommends
Definitely one of the best omakase I’ve been to in vancouver. It is a very intimate session, Kevin was so engaging and so passionate about the food and makes the session so unique. He was able to bring the guests together, we even started engaging in conversation with other guest at the table.
The food is spectacular, the way the flavours are placed together felt like art. Kevin definitely placed a lot of thought when he created all the dishes.
Warning it was not cheap, definitely not for the average diner but I still recommend coming here for a very special occasion.
This is a Korean owned and Korean chef joint that is taking advantage of the growing global popularity of Edomae sushi served in omakase style. Nothing wrong with that since there are obviously shortages of properly trained (years of shitazumi) Edomae sushi chefs from Japan. But if you have eaten at numerous mid to high-end Edomae sushi restaurants in Ginza, Higashi-Ginza, Tsukiji, Nihonbashi areas in Tokyo, you can tell the difference eating at such restaurants in their sumeshi, neta, intricacies of the prep work required to control and bring out the best texture and tastes in the seafood of neta. Also the technique of making the nigiri.
Fantastic place. Excited to go again.
Lovely place, lovely hosts and very delicate food. Fine dining is not really my kind of thing but came here with my partner, and I can definitely tell it's a premium experience for people who appreciate high quality seafood with attention paid to preparation and service.
The chef was also very friendly.

We had such a lovely time at Sushi Bar Shu for their omakase service. The attention to detail was spectacular - from service, to ambiance, and to the food. The service is very intimate and it’s amazing to watch the chef work. We had some truly memorable bites from appetizers through the sushi course and dessert. I highly recommend the wagyu add-on- it was the perfect way to end the savory course of the meal. We’ll definitely be back!
