Perfect Steakhouse Experience from Food to Service
If you’re visiting Whistler, this steakhouse is a must-try. We celebrated my boyfriend’s birthday here and brought our own wine, for which they charged a corkage fee. However, the fresh Burrata Salad and the crispy-on-the-outside, tender-on-the-inside Ribeye were so delicious! It’s so worth it!

Incredibly overpriced, especially considering the quality. Had to send back an unequivocally overcooked steak, only for the server to come back to let me know the chef had the nerve to say he "disagreed, but made me a new one anyways". Disgusting experience, will not return

I didn't like how this restaurant was connected to the end of another restaurant but I will say the atmosphere is insanely nice. Our waiter was nice and professional but the food really threw me off. Bread service tasted great and I had high hopes but my salad, steak, and dessert were pretty bad. The salad felt drowned in sauce, the steak tasted really sweet for some reason and I had to bite into the lemon slices they gave us for our water to reset my pallet, and I'm not sure why they'd use chocolate ganache instead of chocolate buttercream in the chocolate cake when the actual cake part of it is already dry and dense. But maybe I just ordered the wrong things as my brother said the sashimi and lamb were decent.

A phenomenal experience at an exceptional resort hotel. I was lucky enough to get one of the few Wagyu burgers of the night. Easily one of the best meals I have had in my life. There is a lot to be proud of at the Four Seasons. Everything is done right here from beginning to end. Superb.

Thank you to this restaurant for saving my birthday celebration. The atmosphere was not only stunning, but the service was excellent from start to finish. The food was delicious, and every staff member, from the hostess to the manager, made our visit exceptional. While the price is not for everyone, it reflects the Four Seasons level of quality and is worth every penny. Everything was perfect. Thanks to everyone who made us happy.

Allow me to regale you with my divine evening at Sidecut Steakhouse, nestled within the ever-majestic Four Seasons in Whistler—oh the splendor! Upon my arrival, I was swiftly whisked away by the valet, who, with the grace of a seasoned diplomat, directed me to the restaurant, perched on the lower level like a hidden treasure waiting to be discovered.
Once inside, I was greeted by a host whose demeanor could only be described as effervescent. She guided me to my table—oh, the table! Situated next to a crackling fireplace, it was positively dripping with romantic ambiance. Yes, I dined alone, but with that cozy hearth beside me, I could have sworn the air was tinged with intrigue and affection. Romantic? Indeed. LOL, as the youth say.
Teegan, my server for the evening—oh, Teegan—what a delight! A paragon of knowledge, with her charming British accent, she regaled me with the intricacies of their prized wagyu selection. And darling, let me be clear—this isn’t just any wagyu. This is Canada’s only certified purveyor of the illustrious olive-fed A5 wagyu—you know, the kind that practically melts on your tongue. They’ve truly outdone themselves with this one.
My culinary journey commenced with a serving of rosemary bread, warm and fragrant, with a side of maple-infused butter. Fresh, darling, is an understatement. The butter’s subtle sweetness was an unexpected, yet enthralling contrast to the warm bread. A truly divine beginning.
Next, the sunchoke and potato soup arrived—creamy, light, and perfectly seasoned. Those delightful little pumpkin seeds scattered on top, darlings, they added just the right amount of texture—a triumph!
Then, the pièce de résistance of my appetizers: the steak tartare. It was fresh, vibrant even, with the perfect interplay of mini pickles and capers. A veritable dance of flavors upon my palate.
Now, let us not forget the minor hiccup—my Caesar was momentarily misplaced, and instead, I received the burrata. But fret not! Teegan, being the absolute gem that she is, promptly corrected the situation, and I was generously allowed to keep both salads. Imagine my delight! The Caesar, crisp and refreshing, with perfectly cooked bacon and those delightful semi-hard-boiled eggs—exquisite. The burrata? Creamy, with the lightest touch of balsamic and pesto, though I must confess, the sweetened pears weren’t quite to my classically inclined taste.
And then, darlings, the main event—the wagyu. The 8 oz wagyu steak, presented regally upon a salt board. It was cooked to absolute perfection, and when paired with the side of melted butter I had specially requested, I was, quite simply, in heaven. Accompanied by Yukon Gold mashed potatoes and the most heavenly rigatoni mac and cheese—super cheesy, yet never overwhelming—it was nothing short of a revelation.
Ah, the ambiance! Cozy, intimate, with lighting so deliciously low, one could almost feel like a starlet hiding from the paparazzi. And yes, a brief jaunt to the lavatory led me through some temporary facilities—a hike, really, that felt as though I were trekking through the Andes and halfway around Lake Titicaca! But, darling, these makeshift bathrooms were so opulent, they nearly made the journey worth it. I hardly minded.
In conclusion, my dearest, Sidecut Steakhouse is an absolute must for any soul gracing Whistler’s snowy embrace, especially if one’s heart (and palate) craves the finest in wagyu indulgence.

Expensive, but my goodness absolutely delicious and well worth it for a special evening dinner! Of course the service is top notch. We ordered their beef wellington and it was picture perfect. We enjoyed both cocktails and wine. I’d recommend their Golden Bridge Sour. The Vulcan De Fuego was a fun drink with dramatic presentation, presented in a box filled with rosemary smoke. Overall I’d say worth a visit on a special occasion, even if you’re not staying at the Four Seasons.
Note: The restaurant is tucked away behind another restaurant in the hotel, so it may be confusing. That said, you can just ask the folks at the front and they can guide you to Sidecut.

Because of an Amex Plat perk, our stay at the Four Seasons Whistler included $220 worth of dining credit. So we decided to take ourselves to their fancy steakhouse one night. They only have reservations from 6 and 8 PM.
For drinks, I had some kind of pineapple mocktail. It was overly sweet and a little too sour. I ended up watering it down myself, but it would have been nice with some seltzer in it to make it less sweet. Hubby had the Third Pole (Angel's Envy bourbon, artichoke amaro, chaga tea with cardamom and sarsaparilla bark, lemon, Bittered Sling Kensington Aromatic Bitters), which is inspired by a whiskey sour. I do like how unique their cocktails are - each are 'inspired' by a classic cocktail, and they put their own spin on it.
They started us off with some freshly baked rosemary bread with maple butter. The bread was really good, but the butter was even better. I didn't think I liked maple, but this butter may have converted me. I found myself eating more of the bread just so I could eat the butter. For mains, I went with the Miso Cod (dark white miso glaze, pickled daikon, momiji oroshi and ponzu emulsion) and he had the 20 oz bone-in striploin. My cod was very tender and fresh. Texture-wise, it might have been the best cod I've ever eaten. Forget about the frozen filets you see in the supermarket. This was nothing like that. The flavor was just okay - too much going on. Also, the pickled daikon that was mentioned on the menu was just pickled ginger. The steak was much bigger than we thought it would be - we thought it would be mostly bone, but it's nice that it wasn't. Hubby seemed to enjoy it, and it was cooked to the requested medium rare. We also had a side of the Yukon Potato Puree with Confit Garlic, which our waitress said is enough for more people, but that also came with more than we expected. It was good but very rich and I kind of wish I opted for a veggie of some sort instead.
We skipped dessert but while we were talking to the waitress, the topic of babies came up and we mentioned we were on our babymoon. She was very sweet and brought out a dessert on the house. It had a pistachio macaron, some sort of chocolate caramel tort, and some berries. It was a nice, sweet finish to the meal.
We probably would not have dined here had we not had the dining perk but I'm glad it gave us a chance to check it out, because it was a nice experience.
We've visited SIDECUT several times in the past, and on this occasion, we had an exceptional experience. From check-in through dinner service, the food, and the impeccable service, it was the perfect start to our weekend getaway in Whistler.
We began with warm bread accompanied by maple butter and sea salt, setting a delightful tone for the meal. For appetizers, we enjoyed the steak tartare, which was beautifully composed with capers, gherkins, shallots, parsley, an organic egg, and potato crisps. The baby gem Caesar salad was also outstanding and highly recommended for Caesar salad enthusiasts.
For our main course, we shared a 12 oz Canadian Prime ribeye steak from Alberta, cooked to a perfect medium rare, perhaps slightly under, which suited our preference. Our sides included duck fat Pemberton potatoes with rosemary and rigatoni mac & cheese, both of which were delicious accompaniments.
Despite feeling quite satisfied, we indulged in the chocolate soufflé for dessert, which was rich and a fitting conclusion to our meal. The evening was made even more special when the restaurant surprised us with a birthday dessert, a thoughtful and appreciated gesture.

We visited here during the spring deal for a set course menu. Absolutely stunning food and service. Service went above and beyond and the food was superior. We look forward to coming back in the future.
