“Lechón asado. If you eat pork, that's the way to go. Tender roast pork marinated in mojo, a delectable garlic-citrus sauce, is topped with rings of not-quite-raw onion and served alongside a mountain of white rice, onto which you spoon saucy black beans. As if that's not enough you get a side of sweet fried plantains too. Portions are plenty, but if you want a starter, look no further than the yuca frita, chunks of fried starchy cassava root with more mojo to dip, of course (though I wish they offered yuca boiled as well). It's the closest most of us will get to Cuba without a change in diplomatic strategy.“
