I was in Mendota for work and knew I had to get papusas. Mendota is not a large town but they manage to have 3 times as many papusarias as Fresno, so they must know something. Decided to give this place a try as it was around the corner from the house I had to go to, and I almost missed it. It kind of looks like a converted garage from a residential house, so I actually passed by it twice before spotting it. I'm glad I did. It is incredibly affordable, and super delicious. The only downside is they only have outdoor seating, so if the weather isn't pleasant, you won't want to be eating your papusas there. Not a big deal if you live in town, but my only other alternative would be eating in my car. My papusas were perfect, I was just the right amount of full, and I don't think I spent more than $6. You really can't beat that. Next time I'm in Mendota, I am definitely having lunch here.
