Enjoyed the lunch there. Ordered some beef noodle soup, two lamb dishes, one cold salad , dumpling bao, pan fried green beans. All tasted excellent. Of course the stars are noodles and lamb. The damage is under 100 for 3 with some left over.

Got the Xinjiang Mixed Noodles and it was great! The noodles were chewy and plentiful, and there was a good mix of flavorful vegetables and meat. Definitely hit the spot, and pretty authentic too.

This is not casual grilling. This is chuan’r done by someone who knows how to manage radiant heat and airflow, someone who has stood over charcoal long enough to feel doneness through scent alone.
The hand-pulled noodles are the heart of the operation. You can hear them being worked in the back, dough stretched and slapped with that unmistakable shuaitiao rhythm. The gluten development is spot on. The noodles land in the bowl with integrity, carrying broth the way a good Lanzhou noodle should. The broth itself is clean and aromatic, the mark of bones simmered long enough to extract collagen without clouding the stock. The hua jiao is measured. The beef feels like it was sliced against the grain with intent rather than speed.
Service is friendly without reaching for anything performative. They move with a kind of quiet professionalism, refilling what needs attention and leaving you alone when the food takes over your focus. The room is peaceful, clean, almost austere in a way that puts all relevance on the bowls and plates coming out of the kitchen. No noise, no distraction, just the rhythm of a place built on repetition and pride.
The most striking thing is how little pretense there is. Jinweide cooks in a way that respects tradition without embalming it. The knife work is tight. The broth is honest. The seasoning is handled by someone who has tasted the dish thousands of times and still cares about the next bowl.
Five stars because the food has earned it through craft rather than flash. The lamb skewers alone could justify the rating, but the noodles seal it. This is a restaurant that understands its lineage and executes with conviction.

This area has a lot of great little restaurants and this is one of them. Had the beef brisket soup and the broth was very hearty and the meat basically melted in my mouth. The fresh noodles just topped it all off *chef's kiss*. Service was fairly quick and no hassles. Prices were reasonable, especially for fresh hand made noodles.

This is the most authentic Lanzhou hand-pulled noodle in my 25 year’s US dining experience. Besides the noodle, I also love the beef soup perfectly seasoned and stewed to serve the noodle. This is my must-go place when staying around for meals.
