We had Omakase with sake pairing. The dishes were great from the beginning to the end. For me, I enjoyed all of the dishes. Chef Scott was professional, attentive, and friendly. He explained dish in detail clearly. The service was impeccable. The ambiance was perfect! Great experience overall! I can't wait to come back next season to see what chef Scott come up with.

Excellent food and service for new year's eve prix fixe. Servers were professional and pleasant, huge part of what makes the experience. Desserts were a sensation. Will definitely be back.

Went to AMA while we were staying at the rosewood. I honestly found it to be a very average type of meal. It wasn't bad but it wasn't anything great either. We went during nye so it was a little elevated experience at $275 per person but I thought it was very average. The app course the osechi was not very good it had different items on it but I only liked the lotus root. Some of the nigiri options were great but some just fell flat! The chutoro, uni and toro with truffles were def the highlight of the meal. The soups course was also very average. Dessert also fell flat. The service and drinks were great! The head chef was also great with his attitude and the way he was preparing the sushi! I def think that AMA has potential but the flavor of the food needs to be enhanced!

AMA Sushi is extraordinary, led by a serious chef who can be found orchestrating sushi craft and other delicacies at a special bar inside the restaurant. We dined outdoors in a festive holiday space with Christmas lights and torches. We had a delightful, competent server-guide, Quinton, who provided a lesson on the different categories of sake. The four course prix-fixe demonstrated why Michelin evaluators awarded the star. The entree, black cod, was superb as were all the rolls and sashimi. My wife enjoyed the pork belly that was slow roasted and served on plump udon noodles. The mochi pound cake like dessert was tasty and chewy. The chocolate mousse was average. The sake pairing was enlightening. I enjoyed half of them. Service was amazing and satisfying. The restaurant is on the property of a classic old property the Miramar. Old wall photos inside the hotel tell of its prominence in earlier years. This is a great restaurant that should attract food enthusiasts.

Very disappointed in this restaurant. My wife and I have been going to the rosewood for years and love the property. The experience is hard to beat, the grounds are majestic and the hotel feels like one big mansion (which was Caruso's intention). We decided to drive up on a Sunday evening to try the relatively new Japanese restaurant and were extremely dissatisfied. The menu looks perfect, each course and supporting options couldn't be more ideal. However, the filet was equivalent to a filet from Vons (nothing wrong with that but when being charged hundreds of dollars, there is) and the sushi was flavorless and dry. The sushi was so bad that I intentionally did not finish my meal. The staff was great and very accommodating, I feel bad writing this review because they really took care of us and provided complimentary edamame and Sake for our experience. The more concerning issue with my review is this is the second time I've had to write a poor review on the dining at the rosewood. The quality of food at the hotel is not commensurate to the price you pay to stay. The only semi consistent dining option is the beach bar. I really hope the hotel can swiftly change their dining options. It's a true disappointment for such an incredible hotel and property.

I was told that I had cancelled my reservation by the Manager with an attitude. I explained that I had not but she insisted it was my error. I was offered to stay and eat the prefixed menu but not the sushi as it was not prepared. I was not offered so much as a glass of wine or anything for the reservation mixup.The sushi chef is very good and I had enjoyed eating there before but with Lennon, who earned the one star at Montecito sushi opening up Silver’s omakasa in the Funk Zone, there will be other very good choices for locals than AMA with an attitude.

The experience is on a different level. Each course is crafted with a perspective unique to the chef's experiences. Particularly amazing is the focus on Santa Barbara seafood, especially the spiny lobster. Service this attentive is almost alien in a good way. A great place all around for an omakase experience.

Massively, massively disappointing.User interface to make a reservation on their website is not intuitive, making it extremely challenging to book the omakase instead of the smaller set menu. This has happened to us twice now.First experience at the restaurant in January this year was good. But it was disappointing when we expected for the meal to be full omaskase (I even asked the server at the start and he confirmed), but it was the set menu so that was annoying.Experience this weekend was really underwhelming. Not only were we expecting the omakase experience, we were the let down by the 4-course menu that had such a ridiculously small amount of raw fish. The fish wasn’t anything exceptional, and the 2 maki rolls that came with one of the courses was just stupid silly. In each maki roll was 6 pieces of just a little bit of fish with rice, essentially those cheap maki rolls that you can get anywhere, and lacked flavor. And do NOT get the braised pork belly dish, that was such a sad dish where the entire thing was really soft and floppy, including the fat that should’ve been crisped.You can get higher quality and better tasting fish in town at Sushi Bar, Teru, and Arigato. And Teru and Arigato would be much less expensive. If you want a nice setting and something upscale, just pay the extra $40 or so and just go to Sushi Bar - you’ll actually eat a decent amount of fish during your meal.

AMA Sushi is the fancy sushi restaurant at the Rosewood. Matt B. and I decided to check it out when we were in Montecito for the week. There's a 13-seat omakase-only indoor sushi bar, but we opted for the prix fixe, which put us on the patio. I can't speak to the omakase side, but the prix fixe experience was great, a relaxing dinner with excellent service and delicious food and drink.AMA doesn't have the prime location of Caruso's downstairs. It's kind of in the middle of the hotel grounds, with no ocean view, and if there's an event happening on the property (there was some kind of loud Ferrari-themed gathering when we went), you're perfectly situated to hear it. That said, it's a nice patio, and I found the vibe similar to other sushi restaurants at resort hotels, upscale but pleasantly easy. Service was fantastic. Our waiter Jacob took good care of us. He was warm and professional and spent time with us as we talked to him about cocktails and our upcoming trip to Japan. We also appreciated the house somme, who looked barely old enough to drink but knew how to talk about sake.We skipped the sake pairing, which seemed like not enough alcohol for parents with babysitting for the night, and opted for cocktails and a bottle of sake. The cocktails were absolute knock-outs, which I was not expecting. If our round was respresentative, AMA might have the best bar in Santa Barbara. The Uramasari was a perfect drink, a smooth, balanced mix of El Tesoro Blanco tequila, creme de cacao, sesame, lemon, and egg white. The egg white gave it a light creaminess, and the sesame was a beautiful touch. The Ikigai was also superb, made with Nikka Coffey Grain Whisky, Miramar honey syrup, umeshu, aromatic bitters, and pickled ume. We enjoyed a lovely bottle of junmai daiginjo sake, the Bijofu from Hamakawa Shoten, with the rest of our meal.The prix fixe was ideal for my husband, a picky eater who likes sushi but gets a little stressed out by omakase. You can get three or four courses, and there are several choices for each course. We went with the full four, which included zensai, a main course, sushi, and dessert, plus edamame and miso soup. We also added a couple pieces of nigiri. This was a wonderful, satisfying dinner.Salted edamame was a nice way to start, and both zensai were fantastic. I got the namagaki, two sweet, plump little Kumamoto oysters with green onion, wasabi, and a ponzu jelly. Matt had the kanpachi usuzukuri, thin slices of amberjack with juicy skinned cherry tomatoes and tiny radishes and turnips, as well as some ponzu jelly.For the main course (which is about the same size as the sushi course--you choose one if you do the three-course prix fixe), I got the buta no kakuni, a fatty, savory helping of braised pork belly with a side of udon. Matt had the gindara kasuzuke, buttery black cod with a sweet sake-kasu glaze. There were several options for the sushi course, but we both went with the nigiri and cut roll combination (you can also do sashimi and roll, or two rolls). There were five pieces of nigiri: kanpachi, bluefin tuna, king salmon, and two seasonal fish, in this case tai and isaki. The nigiri was not quite in the top tier of Southern California sushi, but it was very high quality. I also loved my roll. I went for one of the more elaborate rolls for a little bit extra, and this was a good decision. The masunosuke citrus was a spicy tuna roll with cucumber and dill topped with cold smoked New Zealand king salmon flavored with yuzu. When I crave sushi rolls, this sort of maximalist spicy tuna is exactly what I want. We added a last round of nigiri, toro for Matt and uni for me, and that Santa Barbara uni was just right, fresh and creamy, made gunkan style with a belt of nori.Dinner ended with a flavorful miso soup with white miso, shimeji mushrooms, and scallion. Then there was dessert. We had two choices and got one of each, and both were great in that not-too-sweet Asian dessert kind of way. Everything about our experience here was incredible! We were warmly greeted by our host Anuk, and our waiter Sean took great care of us throughout the meal. All of the staff was incredibly knowledgeable about the menu, and they were so accommodating to my gluten free needs. Their menu was very inclusive to my dietary restrictions and I never felt that I had minimal options. We ordered the 4 course meal and it left us feeling perfectly full by the end. I also appreciated that our water glass was never left empty -- they were very attentive and paid attention to small details like this! I highly recommend the Boketto cocktail, their jalapeño roll, and the yuzu cheesecake! We absolutely loved the upscale and moody ambience of the experience and restaurant and cannot wait to come back for more!

What a restaurant. You have the bar, 2 indoor tables, beautiful outdoor seating by the bocci courts, and the couple seats where you can watch the master chef at work. It is a little dark inside, but the ambiance otherwise is pretty and nice. The service is wonderful, and the servers and very nice and accommodating, even with the new pre fix menu. The dessert is good, and the sushi is absolutely outstanding! The steak is excellent. Definitely would be returning and would recommend this restaurant. Never disappoints.

Pros: The vibes are immaculate, situated in a really beautiful hotel on the water. Great service. Cons: NOT AUTHENTIC JAPANESE FOOD, SUSHI TASTED VERY BADFood is just not very good. Terrible sushi, everything else OK.Course 1: probably the best out of the four courses, we got oysters and they were pretty good Course 2: got pork belly udon. Very average, you could get this in any Chinese restaurant for $10 a bowl. Also the udon noodles were not udon - not to be picky but for this price, not authentic at all Course 3: Nigiri and hand cut rolls - the MOST disappointing since this is supposed to be a sushi place. Not even close to some average sushi places. The rice was extremely problematic, felt like they seasoned it with white vinegar instead of sushi vinegar and also over salted? Felt like it was either the wrong type of rice or poorly made sushi rice because it was tough, not enough fragrance, not enough moisture. The soy sauce was also not umami, just use kikoman at this point. Soup: Miso soup tasted like it was made from powder, no umami at all. I want to send the chef a YouTube video on how to make miso soup Dessert: better than the meal but I think TOO SWEET. Every good asian knows desserts should be "not too sweet" I would save your money and go somewhere else, this place is all style no substance. Unless ur here for the instagrams, it's not worth it

I'm so glad we chose to eat at AMA Sushi. We did the 4 course meal which included zensai, mein kosu, sushi, and dessert. The price was very reasonable for the amount of food we got. I got the Maguro No Tataki which was good if you're a fish lover. I ordered the prime filet as my main dish which was delicious. It was cooked perfectly. For the sushi options, you get to select from nigiri, sashimi, or a veggie sushi roll. I got the Kani and the Yasai which I loved! The roll tasted fresh and delicious. For dessert, I tried the cheesecake which was okay, I wished there was a chocolate option! The service was outstanding! Sean and Chikara took great care of us. Sean took his time explaining the menu to us and checked on us throughout the entire night. He provided outstanding customer service and made our experience very special! The restaurant itself is really cute and cozy. I loved the vibe and ambiance. This is the perfect spot for a date night!

I came here for omakase, and I'd say it's not your traditional omakase where it's mostly nigiri pieces. There were a lot of extra courses such as soup, tempura, and veggies as well.I liked the nigiri course the most, which consisted of eight nigiri pieces. The fish was fresh, and the chefs took the time to explain each fish in detail, highlighting their unique qualities and advising us on how best to enjoy them. I also enjoyed the sashimi course, featuring red snapper, bluefin tuna, and kanpachi. The freshness of the fish was evident, and the addition of fresh wasabi was great. Each piece had its own distinct flavor profile, making it a memorable dish.I loved the creativity and uniqueness in the other courses as well, and the desserts were especially good.Note that most things were already seasoned and not intended to be consumed with traditional soy sauce and wasabi. Personally, I would have preferred a more traditional approach to sushi. For drinks, I tried the Yugen cocktail, which caught my attention due to its combination of yuzu and champagne. However, it ended up tasting predominantly like sake, with an overwhelming rice flavor. It was a bit too strong for my liking.The interior of Ama Sushi exuded a fancy ambiance, and I enjoyed the overall vibes. The pace of the meal was well-maintained, with a suitable amount of pauses between each course. It lasted about two hours for us.Overall, Ama Sushi provided a great and very unique dining experience. The variety of courses was impressive, although I did wish there were more traditional nigiri and sashimi offerings. Considering the amount of raw fish provided, I found the price to be a little on the higher side, despite the exceptional taste.
