We loved our stay at the Hyatt! The Sea Root restaurant had amazing cocktails and dinner section. We had the halibut and burger and both were delicious! The service was very friendly and quick!

During the weekend, we dined at Sea Root restaurant for both dinner and breakfast. The restaurant's layout is aesthetically pleasing and conveniently located just a two-minute walk from our accommodation. We particularly enjoyed the salad, salmon, and chicken, all of which were prepared to a high standard. The service was impeccable, and the pricing was found to be very reasonable. For breakfast, there was an option between a buffet and ordering from the menu. We opted for avocado toast and oatmeal, both of which were satisfactory.

Wow, what a wonderful breakfast. The eggs benny was PERFECT. The hollandaise was textbook good..and the service was amazing. A little high prices, but it's a hotel breakfast in 2025, so it's expected, I guess.

We’ve stayed at the hotel multiple times, but never eaten at the Sea Root Restaurant for dinner until last night. Kids meals were amazing. The adult entrées were awesome. The steak was cooked perfectly and the flavor profiles were on point. We’re definitely coming back again for tonight‘s dinner, Michael was our server and the service was awesome on night one and Gerason our 2nd visit. Thank you Team

Ordered breakfast from the menu (not buffet). Everyone enjoyed their meal very much. The service was absolutely incredible! Our server Carl was probably the greatest server I have ever encountered in my life. So observant, quick, sincere, courteous, professional, and friendly. My whole family said that they would go back just to experience Carl's hospitality again. Thank you so much for such a wonderful time.
The food was good, but for the price it was just ok. The service was quite slow, which may have been because of a large business conference going on, but it took 5+ minutes to get anything (water, dessert menu, etc). Overall it was good, but not great.

I recently had the pleasure of dining at Sea Root at the Hyatt Regency in Monterey on March 10th. with my family, and it was a delightful experience from start to finish. We were greeted warmly as soon as we arrived and quickly seated, which set a positive tone for the evening. Our waitress provided exceptional service, Cienna was attentive, friendly, and made sure we had everything we needed throughout the meal. The restaurant's ambience was very inviting and comfortable, creating the perfect atmosphere for a relaxed dinner. As for the food, everything was delicious and beautifully presented. Each dish was full of flavor and expertly prepared, making it clear that Sea Root takes pride in its culinary offerings. Overall, I highly recommend Sea Root for anyone looking to enjoy a wonderful meal in Monterey. It's definitely worth the visit, and I look forward to returning in the future! Next day visit at Sea root 3/11/2025 I had an unfortunate experience at Sea Root after what started off as an excellent dinner the day before. Sadly, the service was a complete letdown the next day. The restaurant was slow today 3/11/2025 that I didn't even bother booking a table. Once seated, it took quite a while for anyone to ask if we wanted drinks. After we ordered our meals, we had to wait 15-20 minutes for our food to arrive. The waitress seemed distracted, spending more time chatting with her colleagues than attending to our table. When we finished our meals, we had to wait again for her to ask if we wanted take-out boxes. It was a completely different experience from the night before, and it honestly felt like we were in a different restaurant altogether. I wish Cienna, who had served us so well the day before, had been there to take care of us again. It was a disappointing experience, and I hope they can improve their service in the future and hire more staff just like Cienna.

Server very busy and appeared to be understaffed , we waited 15 for drink order to be taken and 30min for wine to arrive, then another 45 min for food to arrive. Server was doing her best in bad situation. Food was cold upon arrival. Food was decent but not remarkable.
