Makiri Junmai Ginjo

Makiri is the Yamagata term for a fisherman's knife, and the cutting acidity of this sake from Tohoku Meijo brewery lends shape to the term. It's a sharp, dry sake that performs best when served with food, especially rich, fatty foods like pork and melted cheese. [ABV: 16%] (10.1oz/300ml).

Sayuri Nigori

SAYURI means "little lily" in Japanese, a perfect description for this soft floral-noted unfiltered sake. A very light nose filled with lush cream, cherry blossom and light fruit. Semi-sweet palate with a very smooth finish. [ABV: 12.5%] (10.1oz/300ml).

Mio Sparkling Sake

Mio is made entirely from rice and koji rice, and contains no flavoring agents or sweeteners. The sake's 5% alcohol content makes it great for casual enjoyment. Sparkling uniquely sweet sake with a refreshing and fruity aroma, imported from Japan. [ABV: 5.0%] (10.1oz/300ml).

Yuki Otoko Junmai Cup

A classic dry sake inspired by local lore, Yuki Otoko is the bigfoot or yeti of Niigata, said to haunt its mountains and occasionally help travelers through the mountain trails. An excellent intro to classic Niigata sake. Rice is Miyama Nishiki milled to 60%, water is soft from an underground current originating at Mt. Makihata. [ABV: 15.5%] (6oz/180ml).

I believe their regular ramen noodle is a wheat noodle which threw me off.

Pricier side on food and drinks. Not a whole lot stood out.

From the street view you would never guess this cozy ramen spot was hiding back here. I’m so glad we have a Hinodeya in this side of the bay! The interior is so welcoming and nicely arranged. You order from your phone at your table, and the food comes out hot and fast.

I was pleasantly by the number of vegan options on the menu! The yuzu ramen was refreshing and so good. I would also recommend some soft serve if you’re craving a sweet treat. I would definitely...

Visited on a Wednesday afternoon after multiple people told us about Hinodeya and I can't recommended it enough if you're vegetarian or vegan. We ordered the creamy vegan ramen and the summer special (cold) vegan ramen and both of them were incredible.

The creamy vegan ramen is a bit different from the usual shoyu broth and their ratio of veggies to broth was perfect. Special shout-out to the crispy kale - inspired choice :) Ordered this to spice level...
