The beer is great. Varied styles but all focused and dialed in. Great for sour beer lovers. Very cool owner. Cheers.

Cellador has long been a top-rated brewery amongst beer fans/snobs, but their niche is very particular: They produce barrel-fermented sour beers, so if you're looking for a hard seltzer, Czech pilsner, or triple imperial pastry stout, this isn't the brewery for that. Cellador's current location on Del Amo Boulevard in Torrance is not a taproom; there's no place to drink here. To be honest, it's barely even a sales location. From the large Smog City Brewing logo on the wall, one can likely surmise they are using capacity at a Smog City facility ― especially since Smog City's brewery and taproom are right across the parking lot. (That, and the first person who helped me here I later spotted worked at said taproom.) The owner came and spoke with me, and was very patient even as I admitted that I am not a big fan of sour beers and that I had not warmed well to one of Cellador's I had recently tried. Nonetheless, I did find something to purchase: a Lichtenhainer, a rare type of beer that has a lactic fermentation where the malt is smoked, so it's both smoky and sour. (It's an acquired taste, to be sure, but I love smoked beers.) While their style may not be my thing, I respect Cellador's devotion to their craft, and the owner is a really nice guy, too. I wish them the best, and while they may not be in my beer strike zone, I'll keep trying them to see what they're doing.

I dropped by in the morning and pretty sure they were closed, but Santos was nice enough to hook me up with some beers anyway. Cannot wait to try out these unique drafts.

Second to non sours and community. All of the brews this team develops radiates with the thoughtfulness, attention to detail, and care that was put into crafting it.

Love this place, this is my first time here at Cellador Ales and had an amazing experience. They make tasty amazing saison, wild ales and sours. The quality of their Ales production is high at the top ? I didn't expect that I'm gonna find a place makes this style of Ales at this level. Highly recommend and of course I'll be back soon. Thanks Santos for an amazing experience.

Ok, that this review with the caveat that I'm not the biggest fan of sours, but I went with one of my friends who is. First off, the space is adorable! It was a hot day, so I appreciated that they definitely had good A/C and a bunch of tables both inside and outside. I appreciated how friendly and helpful the server was! He was so knowledgeable! And willing to let have small tasters of various sours and ciders before making a decision. Their ales are really creative and interesting! Some of it leaned towards ciders than sours, and a combination of cider + sparkling wine that was a little dryer. If you like sours or ciders, definitely check this place out! They don't serve food there, but they let us bring our own food in.

Great micro brewery with experimental beers. If you’re interested in beers that explore ingredients, fermentation, and aging, don’t skip this spot! The staff are very friendly and welcoming, and are happy to walk you through the current tap list to find something you’ll enjoy. They offer 4oz taster pours of everything on their menu so you can enjoy a wide variety. They also offer a membership for folks who want to be in the loop on their exclusive small batch experiments!

Superb selection of well-balanced wild ales and sours, friendly staff, and low-key ambiance. Try the tepache seltzer.
