We stopped here for lunch and loved it. We had the watermelon mint and regular margarita and we both agreed that while both were tasty, the watermelon was the winner (they use fresh juice and agave and you can tell these are very well made). For the tacos, the fish tacos with mango fell short for us, so we ordered extra of the short rib tacos which were divine - so juicy and tender. We will definitely return in the future to try some of their other choices. Shoutout to our waitress Kylie who was super sweet from the very beginning!
Unfortunately, our experience at Fish Gaucho was a letdown—especially disappointing since it was meant to be a birthday dinner.
We had an 8:15 PM reservation, arrived on time, and were seated promptly. But it took over 10 minutes for our server to come by, and strangely, our food arrived before any of our drinks—including water. The restaurant wasn’t busy, so it really left us wondering what caused the delay.
The service was what really soured the night. Our server had a condescending, street-smart tone that made us uncomfortable. She came by to ask how everything was before we had even tried anything, and when I mentioned that, she replied, “Not even the drinks?”—not exactly the kind of comment that makes guests feel welcomed or cared for. It felt rushed and indifferent. She didn’t even bring the check herself and had the busser drop it off while she moved on to a different table.
I had noted in the reservation that it was for a birthday, but there was no acknowledgment—not a big deal on its own, but combined with the lackluster food and poor service, it made the whole night feel like an afterthought.
The food itself? Average at best. Nothing that would make up for the uncomfortable experience.
Bottom line: we won’t be going back. There are too many great places in Paso Robles to waste time and money on one that clearly doesn’t prioritize customer experience—especially when it matters most.
While the food is ok it is wildly over priced. I don't mind paying for good food but short rib enchiladas at 33 bucks a la cart....It's also very noisy.
Too many runners with poor communication and listening skill. I've been twice. Thanks but no thanks.
I was pleased with the quality of the food — the dishes were well-prepared, flavorful, and clearly made with fresh ingredients. However, the service delay was notable and quite uncommon based on my experience.
At the end of the meal, I ordered a dessert, but the check arrived before the dessert was even served. It took approximately 15 minutes for the dessert to be brought to the table, which disrupted the overall flow and closing of the dining experience.
With more efficient service, the level of hospitality could truly match the quality coming out of the kitchen.
The one suggestion I would give is to put cocktail spoons in the salsa for easier serving. Also, a large spoon fir the nachos would be good. The food IS delicious. When we return to the area, we will be back for more delicious food.
worth the hype ? meh, not al all ..,. just an average over priced American restaurant .. specialities tacos at $5 a pop ? -- not worth it .. hanger steak salad? .. again, over salted salad dressing, as in most American restaurants .. my husband left about 1/3 of it on his plate .. hanger steak and short ribs were tasty, but not worth the price .. server was ok, but not very attentive, had to go find the hottest to ask for our check .. its OK to skip this place if you are questioning weather to pay these prices .. Paso Robles has better places to eat in
This is a must stop when driving thru slo county. The food is great the cocktails are great the atmosphere is great the tequila is top shelf. They have from OOTB one of the best Tequila brands Fuenteseca to The Don if your still into that. You will find great tequila if you want to step into something new. The bartenders were killing it making awesome drinks. You would think Paso is all about wine , right!!!

Fish Gaucho is the entire package. In a time when service seems like a memory, every staff member is at their best, even on a Sunday night. From the manager delivery drinks, the waitress absolutely fabulous, to the food runners and extra staff- it was an amazing experience. The food was delicious, fresh and well-cooked.

Our daughter’s friend recommended we try fish gaucho and we loved it! Great variety and unique menu options and the drinks and food tasted fantastic. They got us in pretty quickly and the service was good.

I recently dined at Fish Gaucho and, unfortunately, the experience left much to be desired. While the portions were certainly large, it felt like they were inflated by unnecessary ingredients that didn’t add to the flavor but just made the plates look bigger. The real star of the dish was often buried under layers of excess toppings and garnishes that overwhelmed the taste and presentation.
It was disappointing to sift through so much to get to the core of the meal. I would have preferred a more focused approach where quality takes precedence over quantity.

Always a pleasant and delicious experience at Fish Guacho! Came in for a nice lunch, we got the nachos and taquitos plus two incredible margaritas! Everything was so scrumptious especially our drinks. Service, as usual, was fantastic and we cannot wait to return!

This is the best restaurant I've been to all year. It's an adorably rancho/seafaring themed atmosphere. All of the staff was extremely kind and seemed authentically nice. The food and margaritas were out of this world. We got the lobster tostado, el burro, chorizo red potatoes, the Gaucho Cadillac margarita, and a strawberry basil margarita. Everything was perfect. This place knows how to balance flavors like nobody's business. I plan on coming back soon!
