Dinner here was fantastic. Highlight food wise was the branzino dish. The fish was cooked to perfection. The skin perfectly crispy and the fish was flavorful and moist. The zucchini pasta dish was also a highlight and everything in that dish was incredibly well executed and flavorful. The surprise dish was the peqino peppers. We had the pleasure of dining at the CIA the week before graduation of the current emerging chefs. We chose the four-course, wine-paired option, which left us quite satiated. Each course was well-prepared, and the selected wines provided a congruent pairing for the textures and flavors of the components. The service was impeccable and feedback was requested and well-received after each course. We will continue to dine with the CIA every time we are in the Napa/Sonoma area.
We treated our friends to the 4-course menu. It was their first time to dine there, our fourth time. Every entree was exceptionally delicious. The student wait-staff were impeccable in their professionalism and attention to detail. Our friends couldn't stop talking about what a wonderful meal and experience they had and we agreed!

The students have a lot of excitement about what they do and are very willing to share life stories with the guests. The food is tremendous, and the service is even better. The menu selections are limited, but each one is excellent. The prices are very reasonable. The students really know their business of running a restaurant, and the guests feel like they had a Michelin star meal and experience. The food is beyond delicious, the service is impeccable, and the ambiance is perfect.
