Bought a large Glendora Quiche Lorraine at Gelsons. Instead of following their directions to bake at 325 degrees, I baked at 375 degrees for 30 minutes - the best! Crisp flaky crust, tender egg custard. Not sure why they instruct to bake at 325 - having made quiches myself, that oven temp is too low. Hoping they re-open soon! I read Jay's (Studio City) review and thought the 325 degree baking was too cool for a quiche. I bought and baked Glendora Quiche's Quiche Lorraine at 375 degrees - NOT 325 degrees - for half an hour and it was TERRIFIC. The crust will come apart if you don't take it out of the pan carefully but this is because it's actually light and flaky, unlike many commercial pie crusts. I purchase Glendora Quiche Company's flatbread Le Parisien with Brie and Fig and it is really good. I get it from Gelson's. I would like to try and make this when I find a recipe.
