SAYURI Nigori (Junmai) 300ml

SAYURI means "little lily" in Japanese, a perfect description for this soft floral-noted unfiltered sake. A very light nose filled with lush cream, cherry blossom and light fruit. TSU NO (Junmai Daiginjo) 180ml

DASSAI 39 (Junmai Daiginjo) 300ml

This Junmai Daiginjo fits in between Dassai "49" and "23" in terms of milling rates and is both similar and different to its sister brews. The nose is fruity with koji rice, apple, honeydew, and strawberry aromas. A very plush sake that is loaded with fruit basket flavors and has a very wine-like acidity presence with a long finish. CHOYA Umeshu (Plum Wine) 50mL

Hinodeya soup forms the base of this ramen to which a little garlic is added. Then we add spinach, bamboo shoots, onsen tamago (runny yolk), green onion and 200g of sukiyaki beef and sukiyaki sauce! Finally, some sesame seed, red ginger and dried seaweed to finish it off.

I visited Hidenoya without much expectation as i just wanted a decent Asian food near Union square. The ramen was more than what i expected! The noodle was cooked right and the tonkatsu was very crispy without oiliness. It was a pleasant surprise!

A late lunch of Spicy miso and gyoza!
The Gyoza with the combination of Sriracha and soy sauce on the side was light, soupy and delicious. The spicy miso soup was perfect in its balance attaining a complex depth of flavors and a slightly forward friendly spicy touch. Not overwhelming, but balanced extremely well. While I’d want to try more things in their menu, I can easily say I’d come back again and again for this meal.
