Maillards serves some of the best burgers, with high-quality meat and perfect seasoning. The smash burgers are cooked to perfection, and the ratios of ingredients are spot on. The potato bun holds everything together, and the crispness of the patty adds a delightful texture. Be prepared for a wait, especially if you arrive late, but the food is worth it. The lines can get long, but it takes an acceptable 30-40 minutes from lining to eating. The burger is a very well balanced burger, from cheese, pickles, shallots, patty width, and buns. The patties are smashed very well and the meat quality is better than your standard smash burger. You can see the chefs doing their thing live at the outer sunset farmers market. The smash burger is crispy and not too greasy. The flavors of the spicy burger is also pretty well made. Definitely don't skip out on the fries either - great texture and seasoning. The fries are fried in tallow and have a more savory profile. They also have a side of sauce to dip their fries. The sauce contains freshly cracked black pepper.
