Matsu No Tsukasa "Cuvee Isabel"
A blend made just for us, Cuvee Isabel is an exploration into the world of sake blending. Utilizing 55% milled Yamadanishiki from 2018, 2019, and 2020 along with a bit of Wataribune (Junmai Daiginjo) and Ginfubuki (Junmai), Cuvee Isabel is a sterling example of creating depth, balance, and complexity through blending different batches. (Type: Junmai Ginjo)
Hakkaisan "Yukimuro"
The minimalist white bottle represents the unique snow-chilling method used in this sake's brewing. "Yukimuro" is aged for three years in an insulated room next to huge mounds of frigid, mountain snow. This traditional and environmentally-friendly technique adds a smoother, rounder feeling to the already creamy flavor, which is sweetened by hints of pear. Feel the snowy freshness of the slopes anytime with a few sips of "Yukimuro." (Type: Junmai Daiginjo)
Katsuyama Ken
Katsuyama has its roots in brewing sake for feudal lords, including a renowned samurai, Date Masamune. Now, the brewery's lord-worthy range of sake includes this expert junmai ginjo. It is slightly heavier and drier, which mixes to create a bold flavor, and just a hint of sweetness. Next time you're pouring a glass of the Katsuyama "Ken," remember to make a toast to the lords of old. (Type: Junmai Genjo)
Heiwa Nigori
A no-frills, slightly sweet and sophisticated nigori with a hint of melon on the palate; it is incredibly smooth and balanced to please both novice and experienced drinkers. Texture can be a bit chunky with the natural rice koji, with enzymatic benefits to both your body and soul. The green bottle is reminiscent of the bountiful nature that surrounds the brewery and the clear, soft water from Koyasan. (Type: Nigori)

Wine
Domaine de la Villaudiere
Sancerre Rose, France. Brilliant, bright pink hue with salmon highlights, the wine has a powerful bouquet that combines red berry fragrances (strawberry, cherry, red currant) with spicy nuances. On the palate, the balance of freshness and smoothness is immediately appreciated and the wine shows a lovely full character and long-lasting aromas. The floral and fruity aromas nicely line the palate and the finish is light and long.
Cave de Ribeauville Osterberg
France, 2018, Riesling. Pronounced mineral aroma, but the flavors show ripe peach and apple set against a rich texture. Dry with a floral after-taste.

I went on Tuesday evening, and it wasn’t crowded. The host and chef were very hospitable. Their dedication to their food and service gave me a fantastic experience! I had the omakase experience at the bar, and loved seeing the chef cut fresh fish to serve on my plate. The menu was a perfect balance of authentic nigiri/sashimi and dishes that showed off the restaurants creativity and style. Everything was delicious. I would definitely come back again!

I had the incredible pleasure of dining at Sushi Hakko today with my 17-year-old daughter, and we were completely blown away. Chef Alex, the owner of the restaurant, was personally behind the counter preparing our 19-course omakase tasting menu — and every single dish was a masterclass in flavor, balance, and craftsmanship.
