Spicy miso tsukemen was outstanding. Broth has a very smoky flavor and spice level was just right. I recommend to just get the plain option, not the special as the dipping broth already has bean sprouts, bamboo shoots, and pork. Waited about 15 minutes on a Saturday 6:30pm.

This was nice! I felt that the first bite of the standard hot tsukemen was amazing, although by the end it seemed good but nothing special. Maybe I was just getting full, but also, there isn't a ton of variety between noodles, eggs, and pork. Everything was clearly highly optimized, and I think it was the strongest charcoal char flavor I've ever drank - that's right, I mean drank, because the broth tasted like it was charred (in a good way). Service was fast, and the atmosphere was as expected for such a joint.

The ramen at the Shugetsu was absolutely delicious! The broth was rich and flavorful, and the noodles had the perfect texture. They even have a corner to make their noodle in the house. I ordered the Shugetsu ramen and was delighted by the tender slices of charcoal-grilled pork and the soft-boiled egg. The pork is full of charcoal flavor and tender. Their fried chicken is also unique. It's very crispy outside and juicy inside. Recommended.

Hungry for some great delicious Ramen noodles? Love to enjoy the warm service and the great atmosphere with real Ramen lovers? This is NOT where you want to be at.Waited for over 30min with all members of the party present, when there is clearly several tables open, and staff clearly not busy, we were not able to even sit down. And no single explanation to us as why the long wait (no reserved table, 4 staff onsite, much space open).The shop is probably obsessed with taking on-line orders and did not cared about the people that is physically waiting in line to taste on site.After all, a REAL ramen professional should know what is more important: at least let people who came for your food sit down and give them the menu so they can have an equal right to order in your shop while you and your staff are taking care of the take-outs.On the score. A three star for the food as I was never privileged enough to have the chance to even order it from the menu. But a solid single star for the unique service and atmosphere.

The service was horrible. We wait outside and they have multiple empty tables inside. No one take care of the people who are waiting outside. People are chatting in the kitchen and showed no respect. Don’t recommend.

This is some top tier ramen. The texture was fantastic. Broth super rich. The most amazing crunch karage with the crunchy skin attached. Service was fast and responsive. You can see why they're a ramen champion.

Would go back again and have gone back again:) Thaaanks! -What I Ate: Shugetu Tsukemen (Hot): 5/5 The main star of this dish for me was the broth. Coming in hot with smokey, meaty flavors from the charcoal-grilled pork. Accompanied with vinegary notes, oh man I felt like I was drinking sisig. The other components: noodles, boiled egg, and pork hit their mark as well. Would get again and have gotten again:) Deep fried chicken soft bones: 4/5 Crunchy batter chicken cartilage. Came out hot and hearty to the bite. Well portioned for an appetizer. -When + waitTime?: I went on a Sunday, minutes after open so no wait. It was almost full by the time I was wrapping up my meal, so possible wait if you arrived an hour after opening. -Parking: They're in a plaza so parking shouldn't be an issue. -Closing remarks They give more broth mid-meal. The service was great. Cool decorations.

TL;DR: generous portions and tastes decent but avoid if you don't like your food tasting and smelling like butane from the torch Located in a pretty random strip mall in San Mateo, this was one of the few places I've been to that hasn't been located in the main areas that everyone goes to. The shop is mid to small sized with a decent number of table seats and some counter seats as well. Service is friendly and efficient, and I enjoyed sitting at the counter watching the two chefs prepare bowl after bowl of tsukemen. They are famous for tsukemen of course, my favorite kind of dipping ramen, and you can upsize your noodle portion at no cost. The portions are very generous, I struggled to finish my large and definitely should have gotten a medium! I saw some other tables order large portions of noodles and share it amongst two or three people. This seems to be a noodle chain from Japan which they proudly proclaim all over their shop and you can also see that they have a ramen machine on the side where they make their own noodles from flour imported from Japan. We got the chicken cartilage karaage appetizer and it was SO GOOD. I would totally go back just to eat this - it was addictive and went so good with the green onions and ponzu. The karaage pieces were really crispy, and had really good texture. It would be so great as a side to some sake and conversation. The noodles came in a generous portion like I mentioned. My order included the extra pieces of chashu and ajitsuke tamago, with the dipping sauce on the side (also had some pieces of pork and green onions). You can ask for dashi at the end to make your dipping sauce into a soup too. It tasted good at first and I liked that the noodles were very thick and chewy, it had a nice mouthfeel. But as I kept eating the noodles and chashu, I realized that they had torched the chashu (both on top of the noodles and in the sauce) - which would be great usually with those nice toasty notes, but I could really taste the butane gas as I kept eating. And after I added dashi to my sauce, the whole bowl of soup just tasted like gas. It might work for some people but it was not my cup of tea. Kinda sad because it tasted good overall, though it was really rich and I would probably have appreciated if we had something lighter to cut through the fat like something citrusy. There are other tsukemen places in San Mateo that I prefer so I'm sad to say that I would probably go there instead. I really wanted to love this place because of all the great reviews.

I ordered the shugetsu tsukemen with the cold noodle with extra green onions on the side($2).First I want to say I think the pricing incentivizes you to order more noodles to bring out your inner glutton. I thought the dipping broth was just ok, it was on the mild side in terms of flavor with moderate smokiness to it but I don’t think it was the good kind and the flavor was just mildly porky and savory. My friends who brought me did say that it didn’t taste as good as before so maybe they have consistency issues or the quality went down.

We come here almost every other weekend lol, it's really good. Something about their dashi is just sooo delicious. I've pretty much had everything on the menu, everything so good and flavorful.
