I really was wanting this restaurant to be great based on the menu but it had some issues.
First set of drinks (Gibraltar and Frank 93), which came after the appetizer, where not good at all, although the next set (Lucky Ruby and Bonne Poire) were much better.
The whipped brie was appetizer - the cheese and fruit were good, but the ratio to pastry felt lacking and the pastry itself dry and very very messy.
The grilled butternut squash was good, although we could tell it had been sitting a bit, and my husband really like the rosemary chicken sandwich.
Service had some issues too, we had to ask for bread although other tables received it automatically, drinks took a while to get, and general slowness (outside of the app).

Delicious sit down restaurant offering food and drinks located in the historic and visually stunning Hotel Boulderado. Several quality vegetarian options available on the menu, and our friends who keep it halal were also able to find quality options. Service was warm, kind, and personable. Give yourself time to enjoy the ambiance!

New year day staffing was awful! Place was packed and couldn't handle the situation and most of the wait staff had an attitude! Drinks took 15 plus minutes and apps were even later. The main was marginal! Terrible experience for at one time was a great hotel!
Would try again just not on New Year's Eve. They seemed overwhelmed. The food was fresh and the short rib arancini was delicious!
Have spent several New Year's celebrations at the fabulous Boulderado. This will be the last for awhile. The restaurant and bar were not prepared for the evening. We were seated for an hour before menus were brought over. Felt sorry for the couple of wait staff members that were there. Food was just so-so when it was finally served. Could not wait to get out of there. Food and drinks were comped (a plus) but overall, not a good experience. Stay away on busy days.
We had an excellent experience at Spruce. We went 4 days after Christmas and the building was very festively decorated. The food was excellent. Two of us had the salmon with lentils and two had the duck. Everyone loved their meal. The service was excellent ( thank you Max) and for a great meal the prices were good. They have great cocktails and a nice wine list as well. Overall it was a fantastic meal.
This is a lovely restaurant with excellent food just inside the historic Hotel Boulderado in downtown Boulder. I had brunch there twice — once with a group of four girlfriends and once alone. Both experiences were equally enjoyable.
The atmosphere is upscale and comfortable. The food is nicely prepared and presented, yet reasonably priced (by Boulder standards). The service is top notch. (Special shout out to Severine who took good care of me.)
And if you are staying at the hotel, it is highly convenient (of course!)

Wild mushroom omelette was delicious as was the side of fresh fruit. Sour dough toast was disappointing
Had the Tri-tip special. We live where the Tri-tip cut was invented. The Tri-tip beef I would rate as average but the sides were excellent.
