I visited Semplice during my trip to Colorado in mid October 2024. When I tell you, this is the best breakfast spot I’ve ever had. The staff were insanely funny and the panini & matcha I got were heavenly (I’m dramatic but it’s true). I’ve thought about this place constantly ever since I had it and I’m so mad we don’t have this exact cafe in Illinois.
Absolutely the best breakfast burritos in Breckenridge, and the coffee is good too. You order at a window and sit outside, or take the food with you. Really, the folks in town know how good it is because there are usually people waiting out front for them to open in the AM.
When you actually bite down and taste the quality of the grub you'll understand. That's all. I had the mountain goat. Delish! Quite Impressive what they do with an on demand right now (fast food -ish) style mini locale.
