“Plosky’s was a great find in Carbondale. Modern-ish deli with a coffee shop kind of vibe, but it very clearly feels like a local favorite.
Had the pastrami on rye, because obviously. The pastrami was excellent. Not shaved thin, not huge chunky pieces either. Best description I’ve got is that it almost looked like thick bacon. It came with mustard, kraut, onions and pickles, and I’m pretty sure the whole thing got some time on the flat top. The rye was toasted just right without trying to steal the show from the actual sandwich. Pickles on the sandwich plus a spear on the side.
$17, which feels pretty fair for where you are, especially for a sandwich that good.
Staff was friendly and service was impressively quick. A line formed while I was there and disappeared almost as quickly. They clearly know how to move people through without making it feel rushed.
Indoor seating is a little limited, so keep that in mind. Also, Google Maps may try to convince you to approach the place from a direction that makes absolutely no sense. Trust your gut, keep going around the roundabout, and you’ll find it.

Would absolutely stop here again.“
