We stopped here on a whim looking for more affordable Mexican food than regular Mexican Restaurants. Awesome choice.We ordered their double Quesadilla and some beans. It was the best quesadilla ever and the beans were so flavorful and to our surprise loaded with cheese. Yummmmm
I recently moved away from the Roaring Fork Valley. There’s a million great reasons to come back to visit but this Carneceria is my number one. Soon we will be reunited. The operators and owners are extremely friendly and it has a very homey feel. If you want the best Mexican food you have ever had in your life, you go here. It’s a Carbondale staple, it’s food, it’s a life staple.
