Generally speaking, the western side of Colorado can be somewhat of a vegan desert. Unless you have an unlimited budget for Aspen, or are willing to eat Asian food most anywhere else, finding different vegan foods in this area of the state, especially breakfast, is challenging to say the least.

Reece was an attentive, professional, and extremely pleasant server with a bedside manner beyond what I would expect of someone her age. Food was delicious as always, and the pies especially are highly recommended! This is a staple of the Carbondale restaurant scene and there is no better alternative for brunch in the Roaring Fork Valley.
While they’re only open from 7 AM to 2 PM, they serve breakfast all day. My husband had the tofu scramble. It is full of veggies. He added salsa to give it additional flavor, although I thought it was fine as it is.Just make sure you ask for no butter on your toast. They have a wonderful jelly available, so no worries.
