My spouse and I arrived around 5pm and were seated between the entrance and cash register. Although I typically don't mind, this time I was curious to see how it would unfold since this is somewhere they are trained to know. The constant flow of people walking past us reminded me of a bustling Texas Roadhouse. We ordered an appetizer and a main dish, only to find the portions surprisingly small; the mashed potatoes serving was about the size of a teaspoon. Our drink remained empty for over ten minutes before we received a refill, and the waiter checked on us merely twice. Opting to leave as soon as we could, we ended up grabbing pizza on our way home instead. We will not be back to this location.

I hate to post this because Logan, my server was on point. That said, the best thing we had all night was the potato’s. The broccoli was okay. The premium steak was absolute garbage. The marbling was advertised as fantastic was ruff. A steak for that price you should cut with a fork. It was so bad we gave it to the dog, couldn’t finish it. I can’t not express without profanity how bad that steak was. Crab cakes had potential but were greasy. We had another appetizer with raw tuna that was tacky in texture.This place has so much potential. They have a great front staff, the tech is cool, the atmosphere is perfect and its location is close. Somehow it didn’t come together. I think if you drink more the food might be a little better. I was reluctant in posting this only because of Logan. The dude is a pro. The back end did him dirty. Probably should invest in a quality chief. Tipped Logan good but the tip was probably quadruple what the food was worth. I wished I had went to the Costco food court after that experience.

Haven't eaten here but went to the butcher shop.Butcher was nice but I had to wait a while before they came out and it wasn't busy at all, mid day.Also, all their steaks are precut which kinda destroys the point of a butcher shop for me. Cuts seemed to be decent quality, certainly better than you get at King Sooper or SafeWay(but for twice the price), though their wagyu is American and they charge much closer to Japanese pricing for it.Overall not really worth returning for me, but worth checking out.

Watching the manager give eyes to the water server because they saw an eccentric couple is poor. Water server was not professional. We had the same water girl server and she was rude. If you’re going to have high end prices that should come with high end experiences, judgement free. Birthday celebration tonight with zero celebration outside of my name on the menu. Our actual server was awesome and professional, she was the best part of our experience.

Staff was slow , said something about having a large party , apologized two times , food average taste for high price . No management stopped by to ask our experience . I work hard for $225 I should have spent it better !

My husband and I had dinner here the night we got married and it was an absolutely amazing experience! All of the staff were lovely along with the food. They gave us menus that said “Congratulations!” and a fresh rose as well. Best steak I’ve ever had! Will 1000% be going back and recommending to everyone I know :)

I can’t begin to describe the level of amazing this place is. We went for our anniversary and the staff went above and beyond. Everything from leaving a signed card and fresh rose on the table, to everyone wishing us a happy anniversary and thanking us for sharing it with them. They truly are masters at the little things, and that’s what life’s all about. While their service is unmatched, the food is right there as well. Perfect mixed drinks to a steak that’s so tender you almost don’t need a knife. I truly wish I could leave more than a 5 star review. If you haven’t been here, it’s a must.

We recently visited Cowboy Star in Colorado Springs with a large group, and our experience was truly exceptional for two reasons: outstanding service from Jason, our waiter, and the most delicious food I've had in a long time!Jason's service was truly top-notch. He was attentive and friendly, making sure everyone in our group felt welcome and well-cared for. He was incredibly knowledgeable about the menu and offered helpful recommendations when needed. Despite our large group, Jason ensured our orders were taken efficiently and delivered accurately and on time.Jason's positive attitude and genuine care made our dining experience even more enjoyable. He went above and beyond to ensure our group had a memorable evening. We truly appreciate the excellent service he provided and will definitely request him again on our next visit to Cowboy Star!Now, onto the food! Let me tell you, it was absolutely incredible. Every dish was cooked to perfection, bursting with flavor. It was, hands down, the most delicious meal I've had in a very long time.Highly recommend Cowboy Star, especially if you have a large group and request Jason as your waiter! Went here for my anniversary a few days ago. Porter house steak was delicious along with the sides appetizer desert and drinks. Service all around felt like a fine dinning experience except the location of my table. I made my reservation months in advance and asked for a quiet table and was seated in a high traffic center section of the dinning area and it took just a hair away from the experience.

I have never thought about Michelin stars when coming to a restaurant. That level of service and attention to detail in everything to earn a Michelin star is something I have not experienced, until I dined at Cowboy Star. Josh, our server, was fantastic. There was not a moment that we felt like we had to wait to tell him something or bring something to his attention. He was kind, very knowledgeable, and made us feel important. The food was fantastic, and has ruined me on steak from anywhere else, hands down. I love that the menu staples stay generally the same, but with rotating seasonal veggies and plating. We came for a special occasion, and the special little things they did for us was an amazing touch. I won’t ruin the surprises for anyone, but it felt personal and went above and beyond. Long story short, this place deserves a Michelin star, hands down
