They use durum semolina and fresh eggs to give their pasta that true sought after texture and they also use bronze dies, which also helps to give their pastas that wonderful texture (it also helps to hold the sauce better!) They even make an array of sauces that perfectly compliment all of the different pastas they make! Make sure to try the Tonnato and the Proscuitto Cream - you won't be disappointed!...
