Excellent Filipino/mexican fusion flavors. It had chill and authentic vibe where the food has generational traditions passed down and shared. If you are looking to support a local business with an owner who is a genuinely good person, then ADOBO checks all the boxes.
The tacos and bowls had juicy tender carnitas that were cooked perfectly. The spices complimented the savory flavor profile that will keep me coming back for more.
The menu was not overwhelming but presented with enough options that I saw multiple items and had difficulty deciding what to get.
The city makes it hard to keep a small business going and I hope to see good people like them stay in business.

My girlfriend and I made a quick stop in Denver. We ended up at Adobo because it was near downtown and I happen to be Filipino and I didn't realize there were any Filipinos in Colorado. We loved this place. Blain, the owner was super friendly and welcoming. The menu was great, especially since we took a recent trip to New Mexico and there were some hints of their famous green chilies with some of the items, including Filipino items as well! Truly unique experience I can't find anywhere and we travel A LOT! Congrats Blain on the new location and keep sharing great food for the great people of Denver and beyond!

Food truck was at Zuni tonight and I cannot believe the way that we were treated. He was extremely aggressive with us about how much we tipped, and said he was going to make our portion size small because of it. Then he dared us to go to the restaurant and tip like that. We weren’t being served, so 20% is not standard at a food truck. Then, we never got our food and waited almost 45 minutes for it before we noticed him closing up the truck completely and turned the truck on about to drive away. We ran up to the truck and had to stop him and ask if he was gonna give us our food and said “yeah, I guess I’ll give you your food.” It was freezing cold when we got it so I think his intention was to drive away until we stopped him. Also, he claimed he is the owner (which I hope wasn’t true based on his behavior).

Went in for dinner for the first time. The atmosphere is quirky but has a good vibe. The staff was excellent, food was fantastic and the smothered burrito was delicious. Would definitely go back.

Eat here!!! We were looking to try a new restaurant after visiting Meow Wolf and Adobo did not disappoint! The food was amazing! Try the egg rolls! Try the tacos! Try the margaritas! The service was also spot on! How did we not know this gem was here? And the prices were very reasonable-especially for Denver. We'll be back!

Restaurantji Recommends
Being married to the most beautiful Filipina, I have come accustom to eating rice with every meal, so when I don't eat it, I crave it!!! Which leads me to my review....
I have been on the road for too many days only able to take 15 minute breaks and choke down a quick bite of non-sustenance food. This weekend I was able to finish a project early and I was bound and determine to get my rice and Filipino food. I was driving around and saw ADOBO and my heart skipped a beat. I immediately pulled in and went inside.
Upon entering I am welcomed with the warmest welcome and seated right away. The staff was very knowledgeable and let me know the history of the restaurant and what he recommended. I ordered the lumpia appetizer (because I'm a sucker for lumpia). The lumpia and garlic rice were freaking awesome and nearly made me cry with joy!! Then came the lumpia bowl (I told you I was a sucker for lumpia) and let me tell you this, it was out of this world!!! I highly recommend this place and if anyone gives less than 5 stars on Google, you need to have your head checked. Keep up the great work and I hope to stop back by if I'm in town again!!

The chicken wings had great flavor. I love the cholula butter sauce. The chicken smothered burrito with the red sauce was also excellent. We’ll for sure be back. Excellent price for the quality of food.

Blaine is an incredibly talented chef, with attention to detail, and extraordinary customer service. He catered our wedding (165 people) two weeks ago. Our guests cannot stop raving about the food. We also loved the food, as well as the staff he provided. I would absolutely recommend trying out the restaraunt, food truck, and using Adobo for your catering needs. We certainly will again!

Housed in an old building right by the Federal and Spear, a bit more to access from south federal.
The tacos are better as pointed out by most review.
The green chili smothered Taco is best.
The pork belly plates was a disappointment, way too dried - either overcooked or leftover.
The chicken in the adobo chicken rice bowl also drier and harder to eat. The chicken in the chicken adobo taco was good thou.
