Great concept. Love the convenience of healthy, wholesome food made to order, and the employees were friendly. I got a Mexican bowl with a couple of substitutions. It sounded pretty great, but what I got left something to be desired. The portion size seemed quite small for the bowl. It was only about 60% full. They were out of jicama but didn't add a substitution, just left an open spot in the bowl. I asked about it and they happily offered a different vegetable instead. The greens were fine, but the beans were undercooked, the meat was nearly raw, and the roasted carrots (subbed for jicama) were undercooked, but with one side of each singed black. Not a great deal for how expensive it was. It seems like with a little more cooking instruction for the kitchen staff the bowls could be really good! Sorry, didn't think to take a picture.

Bubu used to be great with lots of veggies in the bowls but now it's just become a very expensive bowl of rice with minimal veggies and meat. It's become an $18 white rice bowl with a sprinkling of WAY less than what's actually pictured on their website. It's misrepresentation, quite honestly. Troy Guard restaurants (if he still owns Bubu) are usually very good. This is the second time this has happened and when I sent feedback directly to the restaurant, I received no response or acknowledgement. Bubu in Republic Plaza is like shooting fish in a barrel. They have a captive audience and should be doing better.

Love this place! Great food, exceptional service. I work closer to one at Granite Tower but go out of my way to the Republic location. Atmosphere and vibes at the Republic location is worth the extra effort!

This is my favorite lunch spot downtown. I've been going for three years and it's always been reliable. The amount of food has decreased and that made me really sad. If you don't mind tofu, you can get a pretty decent meal for cheap (I get souhtern california with brown rice). The lemonade and GF chocolate chip cookies are also delicious!

$18 for a half salad bowl. The pictures on the website make it look like we get a full bowl. Don't be fooled. Also, the taste was mid.

It’s a healthy option in downtown. Accessible for city workers like myself that travel on foot. I got the steak bowl. It was okay. Underwhelming options. The veggies are limited. The size is average. Price is high. Might give it another shot. But it’s definitely a top pick for me. Many people in the comments mentioned how they have order stations on a screen now. I understand the frustration with tipping on an already pricey bowl. I am not embarrassed to say I tipped lower than usual. I will say though that the service is really fast.

Decent, but not worthy of 4.5 stars. The bowls they have are huge but they only put a little handful of rice at the bottom.. any extra toppings cost extra, (unlike Poke-World down the street) and for a $20 bowl you get like an ounce of rice.. lame.. 😕
Poke World down the street is so much better. This is what I get for straying from my regulars I suppose.. Poke-World lets you get as many extra toppings as you want, and you are only ever charged extra if you add avocado. They also have more variety with their meats, BIGGER SERVINGS and are overall more tasty.

Great healthy bowls but now you have to order from a screen time Nate and of a human. Hate that change. Also, I’m placing my own order with no human interaction AND the top screen suggest 15 or 20%…. ??

I was in Denver on business and wanted a build your own bowl place . I saw bubu while walking on 16th St. and gave it a try and boy I’m glad I did! This is one of the best Bolz I have ever eaten and the people there were very nice and accommodating. I would go there again anytime! It was very clean the food was very fresh and delicious.

I eat here about once a week, since I work downtown. Everything on the menu is pretty good, and this is great for people that following more of a “paleo” (protein and veggies) lifestyle
