I want to like Bistro North, because there just isn't a lot of other places to go in Dillon/Silverthorne that is reasonably nice and is quiet enough that you can enjoy the company of another couple. The wait staff is very well trained -- professional, friendly and helpful. The quality of the food and the inventiveness of the menu, however, just doesn't justify the prices they charge. Last night, my wife got the fish special (line-caught snapper) -- which was a $65 entree. The interior of her fish fillet was raw -- because we were others, she didn't want to send it back. I had the chicken, which was fine. The ambience -- it's a converted TGIF, and they have tried to make it nice, but it still doesn't feel elegant enough to match the prices. Too bad.

We were greeted with a sweet birthday card (b/c I had let the restaurant know ahead of time that we were celebrating.), the service was over the top - very attentive and helpful. Cool vibes. We visited on a Tuesday night and it wasn't very crowded at all. I will be back when in Dillon.

We are locals, and visit Bistro about once a week. The new menu items are delicious and beautifully presented. We always feel welcome, and watch as others arrive - local and first timers - always greeted with a smile and a welcoming question. The happy hour appetizers can’t be beat anywhere in the county, and many of the main course items are favorites. Stop in if you are visiting or if you are a local and haven’t been in for a while to check out the new menu items.

Ordered the steak here and honestly pretty disappointed. For $75, the portion was shockingly small — it came with only two pieces of steak in the container. The flavor was fine and the sides were okay, but the value just wasn’t there at all.

For this price point I expected a much more generous serving or at least something that felt like a full entrée. Won’t be ordering the steak again.

Joe was an excellent host and helped us choose great main courses that included the osso buco, salmon, butternut squash hummus, fried prawns, and excellent apple tart. The welcoming hosts were congenial and friendly, the restaurant itself is warm, spacious, welcoming and a wonderful find!

This is a made from scratch restaurant with excellent food! They were very accommodating with a food allergy in our group. The service was attentive and friendly. This is a must eat at restaurant if you are near the Dillon area!

I recently joined my parents for their 29th wedding anniversary dinner at Bistro North, and it ended up being one of the most memorable dining experiences we’ve had in a long time. None of us drink alcohol, and sometimes that can make celebratory dinners feel a little overlooked, but Bistro North was the complete opposite.

Our server was so attentive and genuinely thoughtful. When we ordered dessert, they surprised us with non-alcoholic Prosecco so we could still enjoy a celebratory toast. It was such a small gesture, but it truly made the night feel special. Their mocktail menu is also fantastic — creative, delicious, and perfect for anyone who prefers not to drink but still wants something fun and festive.

Bistro North really goes out of their way to make everyone feel welcome, including those who don’t drink alcohol. It’s definitely a safe, inclusive spot to celebrate something special or just enjoy a great meal.

Highly recommend.
