New Mexican Restaurants in Edwards, CO

“We stopped by Fiesta’s Cafe & Cantina today around 10:45 a.m. and had an absolutely fantastic meal.

Even though it was still morning, they were already open and serving from their full menu, which was a pleasant surprise. We were in the mood for lunch, and they delivered.

I had the menudo, and it was outstanding—rich, flavorful, and easily one of the best bowls I’ve had anywhere. You can tell it was made with care and tradition.

My wife Margarita ordered the chicken enchiladas with the white enchilada sauce, and she said it was the best enchilada dish she’s ever had at a Mexican restaurant. The sauce was creamy, flavorful, and completely unforgettable.

What really made the visit special was the hospitality. Our waitress, Paula, was wonderful—friendly, attentive, and genuinely caring. The owner also stopped by our table to visit with us, answer questions, and talk about the food. It’s rare these days to find a restaurant where you feel so welcomed and appreciated.

The food was fresh, the portions were generous, and the service was exceptional. It’s not often that both of us leave a restaurant talking about our meals the rest of the day, but that’s exactly what happened here.

If you’re anywhere near Edwards and looking for authentic, delicious Mexican food served by people who truly care about their customers, this place is well worth the stop. We left full, happy, and already looking forward to our next visit.
