We always make a point to try Thai food when we can find it. We stopped by here earlier in the week after a hike but they weren't open yet. We had heard good things about Thai Kitchen from folks in Vail. For our last hike of the week we went just outside Leadville and purposefully came back through Minturn to stop here for dinner. Everything was great! We had a big party, and filled the place up. It was hot and the AC units were struggling to keep up, but the food overpowered any lack of AC keeping up. It was really tasty! I had the chicken drunken noodles and my wife had the chicken pad Thai. I normally do shrimp, but they don’t do substitutions. I was skeptical, but went for it and it was awesome! My medium was pretty spicy as I was sweating, but it was good!
They had some wonderful vegan options and could make many dishes vegan. Our dishes had so much flavor as well! Will definitely return next time we are stuck in I70 traffic!
