This is one of our favorite restaurants in Ouray. Honestly, a MUST DO every time we are here. The vibe and decor are fabulous and remind of us places in NYC but with a distinctive Colorado slant. We dined at the Western Saloon and Grill for a pre-fixed Thanksgiving dinner. First off, the restaurant and hotel are absolutely goregous. Very historical, charming, and warm. Service was also great. I was especially appreciative of the fact that the cook saw my comment requesting she make vegetarian stuffing - which wasn't on the original menu - and she obliged! The chefs table was a great experience. We enjoyed talking to the chefs and tasting their amazing food. Watching their craft in action was a wonderful experience. The food was delicious and elegantly presented.
