Wait was a little long but worth every minute of it! You can tell that the food was freshly prepared and authentic so don't mind the wait. Our server heard that it was our anniversary and gave us dessert on the house. We will definitely be back.

As a Florida native I have missed Caribbean and Puerto Rican and Cuban food SO MUCH and now Isla Verde is scratching that itch. I have tried every single menu item (we eat there a lot) and here is what you must try:
1. The short rib is the best short rib I have ever had in any restaurant ever.
2. The chicken stew is simple food but gloriously seasoned. I swear I've dreamed about it.

Isla Verde serves pure, authentic Puerto Rican cuisine, a rare find in Colorado. This gem offers amazing food and wonderful service in a cozy atmosphere with cute decor. The massive plates of delicious empanadas, perfect sangria, and standout dishes like grouper, shredded beef, sancocho, arroz con gandules, tostones, pollo aljillo, and mofongo de pollo aljillo are made from scratch. The piña colada is AMAZING. The kitchen has limited chefs, so food may take time but is worth the wait. With flavors that smell like home and dishes that bring back childhood memories, this must-try destination is perfect for both newcomers and those craving a taste of Puerto Rico.
